Ingredients

  • 2 pound chicken breast (boneless and skinless)
  • 2 whole bell pepper (diced)
  • 1 medium onion (diced)
  • 2 teaspoons minced garlic
  • 2 cups chunky salsa
  • 1 oz fajita seasoning
  • 3 cups chicken broth (low sodium)
  • Optional for topping: tortilla chips sour cream, and shredded cheese.

Instructions

  • Add all ingredients to your slow cooker. Allow to cook on high for 4-5 hours or until chicken is fully cooked.
  • Use a fork to shred chicken. Serve and enjoy!
  • Optional: top with tortilla chips, sour cream, or shredded cheese.

Notes

What to serve with the Chicken Fajita Soup:
I love serving this soup with rice. Try either my Mexican Rice or my Cilantro Lime Rice. These are both great options, or you can make just regular white or brown rice.
