    Vanilla Easter Cupcakes with Vanilla Buttercream Frosting

    Spring weather has arrived and we are ready for Easter. These Vanilla Easter Cupcakes with Vanilla Butter Cream Frosting are simple to make and perfect for your Easter celebration. 

    Vanilla Easter Cupcakes with Vanilla Butter Cream Frosting

    Cupcakes make the perfect dessert for a holiday! When feeding a crowd I love doing something simple. Everyone can grab and serve themselves and grab one... or two!

    These cupcakes are adorable and decorated with Easter eggs and an adorable printable.

    Making Vanilla Cupcakes:

    Step one: Start with preheating your oven and then preparing a muffin tin with cupcake liners.

    Step two:  Prepare your dry ingredients by sifting together flour, baking powder, and salt then set aside.

    Step three: Using an electric mixer to beat eggs and sugar. Beat your eggs for about  1-2 minutes until your eggs are a light yellow color. While still mixing very slowly pour in melted butter and vanilla extract. I add just a few tablespoons at a time.

    Step four: Slowly mix in milk and your dry ingredients. Add in some milk then stop and add in dry ingredients. Repeat over and over until all. your milk and dry ingredients are mixed in. Making sure you are scraping the sides as needed until all ingredients are well combined

    Step five: Spoon cupcake batter into your prepared muffin tin about ¾ the way full. Bake for 15-18 minutes or until cupcakes are cooked through and a toothpick can come out clean. Place on a rack to cool completely before icing.

    How to make Vanilla Butter Cream Frosting:

    Step one: With an electric mixer cream together confectioners sugar and softened butter.

    Step two: Once well-combined add in vanilla extract and heavy whipping cream then mix in again.

    Step three: Add to a piping bag and top on cooled cupcakes. Top cupcake with printable Easter sign and candy-coated mini eggs.

    Decorating Easter Cupcakes:

    Once your cupcakes have been frosted top cupcake with a printable Easter sign and candy-coated mini eggs.

    To make the cupcake toppers just print and cut then tap onto a toothpick.

    Ingredients
      

    Cupcakes:

    • 1 ½ cups all-purpose flour
    • 1 ½ teaspoon baking powder
    • ¼ teaspoon salt
    • 2 eggs (room temperature)
    • ⅔ cup sugar
    • ¾ cup unsalted butter (melted)
    • 2 teaspoons vanilla extract
    • ½ cup milk

    Frosting:

    • 2 cups confectioners sugar
    • 1 cup unsalted butter (softened)
    • ½ teaspoon vanilla extract
    • 1 teaspoon heavy whipping cream
    • 1 cup candy-coated mini eggs

    Instructions
     

    Cupcakes:

    • Preheat your oven to 350 degrees. Prepare a muffin tin with cupcake liners. Sift together flour, baking powder, and salt then set aside.
    • Using an electric mixer to beat eggs and sugar. Beat for 1-2 minutes until eggs are a light yellow. While still mixing very slowly pour in melted butter and vanilla extract.
    • Slowly mix in milk and your dry ingredients. Adding in a little at a time back and forth, scraping the sides as needed until all ingredients are well combined
    • Spoon cupcake batter into your prepared muffin tin about ¾ the way full. Bake for 15-18 minutes or until cupcakes are cooked through and a toothpick can come out clean. Place on a rack to cool completely before icing. 

    Frosting:

    • With an electric mixer cream together confectioners sugar and softened butter. Once well combined add in vanilla extract and heavy whipping cream then mix in again. Add to a piping bag and top on cooled cupcakes. Top cupcake with printable Easter sign and candy-coated mini eggs.
