If you want a big bowl of comfort food, you have to try this Vegetable Beef Soup. It’s hearty and delicious one of the best recipes.
This soup has become one of my favorites. It’s loaded with flavor and so simple to make. Vegetable Beef Soup is more than just a simple vegetable soup. Vegetable Soup is loaded with veggies and flavor, but when you add beef, it becomes even more hearty and filling.
How to make Vegetable Beef Soup:
Start by cooking your ground beef and onions in a large soup pot. Once it is cooked drain any excess fat or liquid. Add all the remaining ingredients to the pot and bring to a boil. Allow the soup to simmer for about 20 to 30 minutes. Serve with some Mini Cornbread Muffins and enjoy!
Ingredients:
- Oil – I used Extra Virgin Olive Oil for this recipe, but you can use any oil you have on hand.
- Ground Beef – I used a lean 90/10 ground beef.
- Onion – diced finely so that there are not huge chunks.
- Minced Garlic – use fresh minced garlic or minced garlic from a jar.
- Beef Broth – I used low sodium beef broth for this recipe.
- Frozen Mixed Vegetables – frozen vegetables work great for this recipe, but you can dice fresh veggies if you want.
- Petite Diced Tomatoes
- Tomato Sauce
- Parsley – dried seasoning.
- Oregano – dried seasoning.
- Thyme – dried seasoning.
Directions
Step One: Start by heating the oil in a large pot. Add in ground beef and onions and cook and crumble.
Add in minced garlic and allow to cook for 30-60 seconds. Drain fat at needed.
Recipe Tip
Garlic can quickly burn. Adding the garlic once the beef is cooked and only cooking it for a short time will help prevent burning.
Step Two: Stir in all remaining ingredients and bring to a boil.
Reduce heat and cover and allow to simmer for 20-30 minutes
Tips and FAQs:
Can this be made in the slow cooker? Yes just follow step one then add the cooked beef and all remaining ingredients to your slow cooker.
Allow to cook for 5-6 hours on low or 3-4 hours on high.
Can this soup be frozen? Once cooked allow your soup to cool completely. Place soup in an air tight container and place in the freezer.
Allow to that in the fridge and reheat on the stove top or microwave.

Ingredients
- 1 tablespoon oil
- 1 pound ground beef
- 1 cup onion
- 1 tablespoon minced garlic
- 3 cups beef broth
- 16 oz frozen mixed vegetables
- 14.5 oz petite diced tomatoes
- 8 oz tomato sauce
- 1 teaspoon parsley, (dried)
- 1 teaspoon oregano, (dried)
- 1/2 teaspoon thyme, (dried)
Instructions
- Heat oil in a large pot. Add in ground beef and onions and cook and crumble. Add in minced garlic and allow to cook for 30-60 seconds. Drain fat as needed.
- Stir in all remaining ingredients and bring to a boil. Reduce heat and cover allow to simmer for 25-35 minutes.

Tried this recipe tonight for the first time and it was delicious! I used the exact ingredients and feel it didnโt need anything else! Very easy to put together. I used my crockpot and cooked for 5 hours on low. Will definitely make again! I served with rustic ciabatta bread.

I love the tomato sauce in this recipe. I have used tomato soup when I donโt have sauce. And I add turmeric! It gives it a little richer deeper taste! This recipe is so easy and such a great base that I make it 2x a month! I add things like potatoes, once brown rice and today I am using ground venison!

I hate when people change a recipe and then rate it. I really didn’t want to make a comment because I did change it to suit me and what I had on hand. However, I think this is a very good & easy recipe. I added celery, carrots & garlic to start the soup as I would usually do to make soup. I used sausage & fennel seeds in place of the ground beef. I used the whole carton of beef broth because we like it soupier. Very nice recipe. Thanks for sharing.
