Cream Cheese and Sausage:

I really enjoy the combination of sausage and cream cheese, there’s just something about that rich, savory pairing that makes breakfast feel special without a ton of effort.

This casserole is one of my favorites for lazy weekend mornings when I actually have time to sit down and enjoy a plate. But on busier mornings, I lean on my 3 Ingredient Sausage Cream Cheese Crescent Bake instead, same great flavor combo, but baked into squares I can grab and eat on the go.

Between the two, I’ve always got a way to get that sausage and cream cheese combo on the table, whether we’re rushing out the door or taking our time.

Ingredient Notes

Ground breakfast sausage: Mild or spicy both work well here, so pick whichever your family prefers. Turkey sausage is a good lighter swap if you want to cut back on fat without losing the flavor this easy sausage casserole recipe is known for.

Cream cheese: Let it sit out for a bit so it’s soft before adding it to the skillet. This helps it melt smoothly into the sausage instead of leaving lumps throughout the casserole.

Crescent rolls: Press the seams together firmly to create one solid layer of dough. This keeps the egg mixture from seeping through to the bottom of the dish while it bakes.

Eggs: Whisking them well with the half and half before pouring helps the casserole bake up light and even instead of dense.

Half and half: If you don’t have it on hand, whole milk or heavy cream both work as substitutes, though heavy cream will give you an even richer sausage bake.

How to Make This Sausage Bake:

Preheat: Preheat your oven to 400 degrees F and prepare a 9×13 casserole dish with nonstick spray.

Cook: In a skillet, cook and crumble the ground breakfast sausage. Drain the grease and return the sausage to the skillet.

Add the cubed cream cheese and cook on medium/low heat until the cream cheese is melted and fully combined with the sausage.

Layer: Lay the crescent roll dough in the bottom of your prepared casserole dish and press all the seams together to form one solid layer.

Top with the cooked sausage and cream cheese mixture.

Bake: In a separate bowl, whisk together the eggs, half and half, salt, and pepper. Pour the egg mixture over the casserole.

Bake for 25 to 35 minutes, or until the eggs are fully cooked through.

Tips for the Best Sausage Casserole

  • Drain the sausage well before adding the cream cheese. Extra grease left in the skillet can make the casserole watery once baked.
  • Let the cream cheese soften first so it melts smoothly into the sausage instead of leaving lumps.
  • Press the crescent roll seams together tightly to form one solid layer. This keeps the egg mixture from seeping through the bottom while baking.
  • Whisk the eggs and half and half thoroughly before pouring, so the casserole bakes up light and even instead of dense in spots.
  • Let it rest for a few minutes after baking before slicing. This helps the layers hold together for cleaner squares.

Ingredients 

  • 1 pound Ground breakfast sausage
  • 8 oz Cream cheese
  • 1 package Crescent rolls
  • 8 Eggs
  • 1/4 cup Half and half
  • 1/2 teaspoon Salt , (or to taste)
  • 1/2 teaspoon Pepper, (or to taste)

Instructions 

  • Preheat your oven to 400 degrees. Prepare a casserole dish with nonstick spray and set aside.
  • In a skillet cook and ground breakfast sausage. Drain grease and return to skillet. Cube cream cheese and add it to the skillet with sausage. Cook on medium/low heat until cream cheese is melted and well combined with sausage.
  • In your prepared casserole dish lay out crescent roll and press all seams together to make a solid layer of dough. Top with cooked sausage and cream cheese.
  • In a separate bowl whisk together eggs, half&half, salt, and pepper together. Pour this egg mix into casserole dish. Bake for 25-35 minutes until eggs are cooked through. Serve and enjoy!

I used a 9×13 casserole dish.

    1. Probably only about 5-10 minutes, just to ensure the eggs are cooked. With the sausage already cooked all you have to worry about is the eggs getting done.

    1. Hi Kay, I don’t think I would wait to bake in the morning because of the crescent dough getting to soft. I think you could bake the night before and then allow it to cool and keep it in the fridge overnight to reheat the next morning. I hope that helps and you enjoy the recipe!

However, it would be helpful to show how many servings the recipes make and for the casseroles what size baking dish to use. Just my observation. I cook for a lot of people on our vacation so the servings would most definitely be helpful.
