  • Rotel – drained.
  • Cheddar cheese – Freshly shredded cheese melts into the creamy layer and adds plenty of flavor.
  • Cilantro – fresh cilantro for topping.

Directions:

Step One – Mix together sour cream, taco seasoning, Rotel, and 1 1/2 cup of the cheddar cheese in a large mixing bowl.

Step Two – Serve topped with remaining cheese and cilantro.

Ingredients 

  • 16 oz sour cream
  • 1 oz taco seasoning
  • 10 oz Rotel, (drained)
  • 2 cups cheddar cheese, (shredded)
  • 2 tablespoons cilantro, (minced)

Instructions 

  • Mix together sour cream, taco seasoning, Rotel, and 1 1/2 cup cheese. Serve topped with remaining cheese and cilantro.

        1. Yea I think you cold add some cooked and crumbled sausage to this. I have not tried but it sounds good!

  1. So good!!!!! Will be making over and over!! I love fiesta dips and usually buy the wind and willow premade packets where you just add sour cream but this is so much cheaper and tastier in my opinion!!

  2. Making this tomorrow! Wanted to let you know that under the โ€œhow to makeโ€ section, you have โ€œ rottenโ€ listed as an ingredient. I assume it should say Rotel ๐Ÿ™‚

    1. Hi Sadi! 1 oz is usually what comes in 1 pack of taco seasoning. You can use 1 tablespoon in it’s place. Hope you enjoy the recipe!

    1. Hi Judy. Rotel is a mix of tomatoes and green chilis. If you can’t get it in stores then you can mix 1 can of diced tomatoes and 1 small an of green chilies together to get the same thing.
