A simple side for taco night. This Fiesta Taco Dip has been a family favorite for a long time and you are going to have to try it.
This dip is a family favorite! My mom made it growing up, I have added a few new things to it and I love it even more. The best part of course it how easy it to make.
I love simple recipes like this, mix it and it’s ready to go. Perfect for taco night or even to serve at a party.
How to make this Fiesta Taco Dip!
This recipe is so simple to make. It’s just mixing then serving. Plus you only need a few simple ingredients. Five ingredients to be exact!
This dip is great and perfect for any gathering! Mix it all up and grab your favorite tortilla chips for dipping!
Ingredients:
- Sour cream
- Taco seasoning (You can use my easy Homemade Taco Seasoning recipe for this)
- Rotel, drained
- Cheddar cheese, shredded
- Cilantro
Directions:
Step One – Mix together sour cream, taco seasoning, Rotel, and 1 1/2 cup cheese.
Step Two – Serve topped with remaining cheese and cilantro.
Toppings and Garnishes:
One thing about this fiesta dip is you can kick it up a notch however you want!
You can top this with other things besides just cheese!
On top of the cheese feel free to add some sliced tomatoes, olives, jalapenos, or some avocado slices.
I told you this recipe was easy! You can, of course, add more or less taco seasoning to taste. Enjoy and have a great party!

Fiesta Taco Dip
Ingredients
- 16 oz sour cream
- 1 oz taco seasoning
- 10 oz Rotel, (drained)
- 2 cups cheddar cheese, (shredded)
- 2 tablespoons cilantro, (minced)
Instructions
- Mix together sour cream, taco seasoning, Rotel, and 1 1/2 cup cheese. Serve topped with remaining cheese and cilantro.

Could you add sausage to this?
Yea I think you cold add some cooked and crumbled sausage to this. I have not tried but it sounds good!
So good!!!!! Will be making over and over!! I love fiesta dips and usually buy the wind and willow premade packets where you just add sour cream but this is so much cheaper and tastier in my opinion!!

What size sour cream?
This recipe calls for 16 oz of sour cream
how much is 1 ounce of taco seasoning? teaspoon?
Hi Sadi! 1 oz is usually what comes in 1 pack of taco seasoning. You can use 1 tablespoon in it’s place. Hope you enjoy the recipe!
What is Rotel?
Hi Judy. Rotel is a mix of tomatoes and green chilis. If you can’t get it in stores then you can mix 1 can of diced tomatoes and 1 small an of green chilies together to get the same thing.
