Why This Recipe Works

This snack comes together quickly with just a handful of ingredients, no oven required. It has the perfect balance of sweet, spiced flavor and crunchy texture, and it’s easy to make in a big batch for parties or gifting. It’s also a fun way to use up pumpkin spice flavor beyond the usual lattes and baked goods.

ingredients for the Pumpkin Spice Popcorn.

Ingredient Notes:

  • Popcorn – The crunchy base of the snack; make sure it’s plain/unsalted or lightly salted so the sweet coating isn’t competing with other flavors.
  • White Baking Chocolate – Melts into a smooth coating that binds the popcorn together and adds sweetness.
  • Pumpkin Pie Spice – Provides the warm, classic fall flavor of cinnamon, nutmeg, ginger, and clove in one simple step.

Directions:

Step One: Spread your freshly popped popcorn in an even layer across a large baking sheet or two.

Recipe Tip

A baking sheet gives you way more surface area than a bowl, so the chocolate coats each piece instead of clumping everything into one sticky mass.

Step Two: Warm the white baking chocolate in short 20-30 second bursts in the microwave, stirring between each round, or melt it gently over a double boiler on the stove.

Recipe Tip

White chocolate scorches and seizes easily. Never add water to it, and always use a baking-specific white chocolate (not white chocolate chips meant for eating) since they’re formulated to melt smoothly.

Step Three: Pour the melted white chocolate over the popcorn in a slow, steady stream while gently tossing with a rubber spatula so every kernel gets coated.

Step Four: Sprinkle the pumpkin pie spice evenly over the coated popcorn, then fold everything together a few more times until the spice is distributed throughout, not just sitting on top.

Step Five: Give the popcorn 10-15 minutes at room temperature to firm up before serving, so the chocolate hardens into a coating instead of staying tacky.

Tips for the Best Pumpkin Spice Popcorn

  • Use plain or lightly salted popcorn so the sweet pumpkin spice coating is the star flavor.
  • Melt the chocolate slowly, in short intervals, so it doesn’t seize or burn.
  • Toss the popcorn gently once coated so you don’t crush the pieces.
  • Let the popcorn harden at room temperature rather than the fridge, since condensation can make the chocolate turn cloudy or sticky.
