I love my slow cooker! I could make dinner with it every night. There really is not anything more simple. This simple  Slow Cooker Cheeseburger Soup really was a hit with the family!

My kids LOVED that I added a pickle on top for garnish. I sometimes wonder if they got their intense love of pickles from the large amounts I ate while pregnant!

It is an easy meal to make, and after a long day with the kids or at work, you will come to your kitchen at dinner time with an amazing, hearty meal ready to go.

Ingredients

Ground Beef: 80/20 provides the best flavor, but lean ground beef works well too. Drain excess grease after browning if needed. You can substitute ground turkey or chicken for a lighter option.

Russet Potatoes: Peel for a smoother texture, or leave skins on for a more rustic feel. You could also use Yukon Gold potatoes instead of you have those on hand.

Veggies: I used a canned petite diced tomatoes along with fresh chopped carrots and celery.

Minced Garlic: You can use ½ teaspoon garlic powder if needed.

Seasoning: I used seasoning salt which is a blend of salt and spices for extra flavor. But you can use table salt instead. I also added in pepper and chili powder.

Beef Broth: Beef broth adds rich flavor  but you could use water with bouillon or vegetable broth.

Cheddar Cheese: Shred your own cheese for the smoothest melt. Use sharp cheddar for bold flavor or Colby Jack or Monterey Jack for milder taste

Flour: This will be added at the end with your heavy cream to thicken your soup.

Heavy cream: this is your best option but you could also use half-and-half or whole milk (sauce will be lighter) if needed.

How to make Slow Cooker Cheeseburger Soup:

Step One: Get started by cooking and crumbling your ground beef on the stove top. Once the beef is cooked then drain fat and add cooked beef to the slow cooker.

For this recipe I used a 6-quart standard slow cooker.

Step Two: Next add the vegetables to your slow cooker. Make sure all your veggies are cubed and diced.

Sprinkle in seasoning salt, pepper, and chili powder. Then pour in broth and allow to cook on high for 4 hours.

Step Three: After 4 hours add shredded cheese.

Step Four: In a separate bowl whisk together flour and cream until well combined then add it to the slow cooker.

The flour and cream mixtures really will help to thicken the soup up. Finally allow to cook for 30 more minutes.

Recipe Tip

Now would be a great time to add some cooked chopped bacon, or even real bacon bits to make it a Bacon Cheeseburger Soup!!!

Tips for the Best Cheeseburger Soup

Brown the beef first:
This adds flavor and improves the texture. Cooking the ground beef first, is the preferred method for making a soup in a slow cooker.

Cut potatoes evenly:
Small, even pieces ensure consistent cooking. The smaller sixed pieces cook more easily than larger potatoes.

Add cheese at the end:
Prevents curdling and keeps the soup smooth.

How to Store Cheeseburger Soup

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheat gently on the stovetop or microwave, stirring often.

This soup can be frozen for up to 2 months, though the texture may change slightly due to the dairy.

Ingredients 

  • 1 pound Ground beef
  • 4 cups Russet potatoes, (cubed)
  • 15 oz Petite diced tomatoes, (drained)
  • 1/2 cup Carrots, (chopped)
  • 1/2 cup Celery, (chopped)
  • 1 tablespoon Minced garlic
  • 1 teaspoon Seasoning salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Chili Powder
  • 4 cups Beef Broth

  • 3 tablespoons Flour
  • 1 cup Heavy cream

Notes

I used a 6-quart slow cooker.
When adding cheese, feel free to add Velveeta or Cream Cheese to make it thicker and cheesier.
If you wanted to add fully cooked and chopped bacon to the recipe do it with 30 minutes remaining to cook.
