This year I have made so many cupcakes. Well with the Christmas Season upon us, I decided to do a holiday twist to my popular Funfetti Cupcakes.

The Christmas twist is to make these cupcakes with awesome holiday sprinkles and nonpareils.

These Funfetti Christmas Cupcakes will be the talk of the party, and best treat you can make for your friends and family.

How to make Funfetti Christmas Cupcakes:

We are making and baking Christmas goodies all month of December. The cupcakes are really simple to make. While the cupcakes are baking I use that time to make the frosting.

These cupcakes are sweetened with Vanilla and decorated with Christmas sprinkles and candies!

Ingredient Notes:

  • Sugar
  • Butter – Softened. I used unsalted butter for this recipe.
  • Egg Whites – Make sure to keep these at room temperature. You do not want cold eggs to mix with the warm melted butter.
  • All-Purpose Flour
  • Baking Soda – This helps keep the cupcakes light and fluffy.
  • Salt
  • Baking Powder
  • Vanilla Extract
  • Sour Cream
  • Milk – Any milk you have and regularly use will work. I used 2% milk.
  • Christmas Colored Funfetti Sprinkles – Use any sprinkles you want, but to keep it Christmas colored I used Red and Green Sprinkles.

Directions:

Step One: Preheat oven to 375 degrees F then line a muffin pan with muffin papers.

Step Two: Cream together butter with the sugar until light and fluffy using an electric mixer.

Step Three: Next add in your egg whites, one by one, until combined.

Step Four: In a separate bowl, sift your all-purpose flour, baking soda, salt, and baking powder.

How to Sift Flour

To sift flour gently whisking the flour with short and with quick movements. You can use a fork to do this.

You can also using also use a colander or strainer and pour the flour in and tap it into the bowl to sift.

Step Five: In another separate bowl mix the vanilla, sour cream, and milk.

Step Six: Slowly add the dry ingredients and sour cream mixture into your butter and sugar.

Alternating between the two until everything comes together but careful to not over mix.

Step Seven: Fold in the Funfetti sprinkles.

Distribute the batter evenly into the muffin pan filling each one about 2⁄3 full then place them in the oven and bake for 18 minutes.

Recipe Tip

One thing an eager baker may do is check their cupcakes early. Try not to do this.

One big tip to help keep the cupcakes moist and fluffy is to not open the oven until they have been in the oven for about ¾ of the time.

Opening the oven will offset the temperature by bringing in outside cool air, and this could affect the fluffiness

Step Nine: Once cooked set aside to cool completely before frosting.

How to make Buttercream Frosting:

Did you know there are actually three kinds of Buttercream Frosting? I will be making the American Buttercream style for this recipe.

There is also a Swiss Meringue Buttercream and an Italian Meringue Buttercream.

Buttercream Frosting is a frosting made with Butter, Sugar and some dairy. I use Heavy Whipping Cream as it is more flavorful and rich than just milk, and helps the frosting a lot more.

Frosting Ingredients:

  • Unsalted Butter – softened.
  • Powdered Sugar – also known as Confectioner’s Sugar.
  • Vanilla Extract
  • Whipping Cream

Directions:

Step One: Beat butter with a hand mixer until light and fluffy.

Step Two: Add the powdered sugar little by little until fully combined. Add the vanilla and whipping cream. Mix until combined.

Step Three: With a piping bag, add the buttercream frosting over each cupcake and top with sprinkles.

Allow frosting to set on cupcakes for 2-3 minutes before serving.

Recipe Tip

Make sure the cupcakes are cool before starting to frost them.

What is so special about Funfetti cakes?

If the name alone doesn’t answer that question for you, just take a bite out of one! Yes, these cupcakes are basically a vanilla cake mixed up with sprinkles, but that is what makes them so FUN!!!

Originally introduced to the world by Pillsbury in 1989 this has been a kids birthday staple ever since!

Tips for making a great cupcake:

Use room temperature ingredients: Room temperature ingredients will not cause any drastic temperature changes to your batter when mixing.

Yes, you need to melt the butter, but allow it to cool to room temperature before you mix it in with the ingredients.

Make sure to use accurate measurements: If you do not measure accurately and use a heaping “cup” of flour you will have too much flour, and your cupcakes will be dense and/or dry.

One thing about this recipe is it is very simple to make but does need to be precise.

Making a fluffy, moist cupcake is tough for a lot of people (including me), and using accurate measurements definitely helps!

Allow to cool before icing: This may sound like a no-brainer, but icing these cupcakes that are still even a little warm will melt your frosting and make the frosting look runny.

Part of the appeal and deliciousness of cupcakes is how the frosting looks. Having beautiful frosting will make your mouth water before even tasting them!

Funfetti Christmas Cupcakes

Ingredients 

Cupcakes

  • 1 cup granulated sugar
  • 6.4 oz butter softened, (13 tablespoons)
  • 3 egg whites
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1⁄4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 6 tablespoons sour cream
  • 8 tablespoons milk, (I used 2%)
  • Christmas colored funfetti sprinkles

Buttercream

  • 3.5 oz unsalted butter softened, (7 tablespoons)
  • 2 3/4 cups powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 4 tablespoons whipping cream

Instructions

  • Preheat oven to 375 degrees F then line a muffin pan with muffin papers.
  • Cream together butter with the sugar until light and fluffy using an electric mixer.
  • Next add in your egg whites, one by one, until combined.
  • In a separate bowl, sift your all-purpose flour, baking soda, salt, and baking powder.
  • In another separate bowl mix the vanilla, sour cream, and milk.
  • Slowly add the dry ingredients and sour cream mixture into your butter and sugar. Alternating between the two until everything comes togethe but careful to not over mix.
  • Fold in the funfetti sprinkles and distribute the batter evenly into the muffin pan filling each one about 2⁄3 full then place them in the oven and bake for 18 minutes. Once cooked set aside to cool completely before frosting.

Buttercream

  • Beat butter with a hand mixer until light and fluffy.
  • Add the sugar little by little until fully combined. Add the vanilla and whipping cream. Mix until combined.
  • With a piping bag, add the buttercream frosting over each cupcake and top with sprinkles. Allow frosting to set on cupcakes for 2-3 minutes before serving.

Notes

  • Tip – A dense or dry cupcake is a result of not enough liquid in the batter. If you batter is really thick or dry, add 1 tablespoon of water at a time to get to a nice smooth and creamy consistency.
