    Pumpkin Peanut Butter Cookies

    Everything tastes better with pumpkin and these Pumpkin Peanut Butter Cookies are no exception. Simple to make and tastes great, you can't want much more than that. 

    This recipe is similar to my classic Peanut Butter Cookie Recipe but with the taste of Fall added in.

    Peanut butter cookies are one of my favorites. Add pumpkin into the mix and this cookie is taken to the next level. This cookie recipe is easy to make and they come perfectly every time.

    How to make Pumpkin Peanut Butter Cookies:

    These ingredients can be mostly found in your cabinets already. I always keep Pumpkin Puree and Pumpkin Spice on hand throughout the year.

    Yes I am one of those ladies you will see buying cans of it the day they arrive on the shelf in the grocery store.

    Mix your wet and dry ingredients separately then mix them together. Roll or scoop them into about 1 inch balls then bake!

    Ingredients:

    • Peanut Butter
    • Unsalted Butter (softened)
    • Sugar
    • Brown Sugar (packed)
    • Pumpkin Puree
    • All-Purpose Flour
    • Baking Soda
    • Salt
    • Pumpkin Pie Spice

    Directions:

    Step one: Get started by preheating your oven to 350 degrees F. Then prepare your baking sheet lightly with nonstick cooking spray or with parchment paper.

    Step two: Now combine your wet ingredients. Use a large stand mixer or an electric hand mixer to cream together your peanut butter, butter, sugar, and brown sugar.

    Once combined and smooth add in pumpkin puree and continue to mix until creamy and combined.

    Step three: Meanwhile you want to get started with your dry ingredients. Us a separate bowl to sift together your flour, baking soda, and salt. Then slowing add into your wet batter. Scraping sides as needed while you mix.

    • What is pumpkin spice? Pumpkin spice is a blend of spices. Usually, you find cinnamon, nutmeg, ginger, cloves, and allspice in a pumpkin spice blend.

    Step four: Roll your dough into 1 inch balls. Place on a baking sheet and use a fork to make a crisscross pattern.

    Baking Cookies:

    Step five: Bake for 10 minutes or until cookies just start to turn brown. Be careful not to over bake these cookies can get hard quickly.

    Once cooked allow to cool on the pan or on a wire rack for 10 minutes then serve and enjoy.

    Ingredients
      

    • ¾ cup peanut butter
    • ½ cup butter (unsalted and softened)
    • ¼ cup sugar
    • ¾ cup brown sugar (packed)
    • ¼ cup pumpkin puree
    • 1 ½ cups all-purpose flour
    • ½ teaspoons baking soda
    • ¼ teaspoon salt
    • ½ tablespoon pumpkin pie spice

      These Fall or really any season cookies are WONDERFUL! I live above 5700 ft. elevation so baking time was 15 minutes. The recipe was very easy to follow 😋 I will be making them again!

      Made these today, and they were so tasty! Just wanted to let you know that your instructions don’t mention adding in the pumpkin pie spice.

      My kids love traditional peanut butter cookies. But I love the idea of adding pumpkin to them. Because honestly, this time of year I love to add pumpkin to everything.
