This Cheesy Ranch Chicken and Rice Casserole is one of my family’s favorite dinner recipes. It’s so simple to make and a great dinner when you are short on time.

Chicken and Rice Casserole is a classic. My mom made this all the time growing up and now I love making it for my kids. When we find a recipe we love so much I love making it in new ways. This time we added one favorite flavor, ranch seasoning! Then we loaded it with shredded cheese and baked! This Cheesy Ranch Chicken and Rice Casserole was a winner with my family right away. 

How to make Cheesy Ranch Chicken and Rice Casserole:

Step one: Get started by preheating your the oven to 350 degrees. Then prepare your casserole dish with nonstick cooking spray then cook rice according to package directions.

Step two: Next use a a large mixing bowl to mix cooked chicken, cooked rice, cream of chicken soup, ranch seasoning, and 1 cup shredded cheddar cheese. Add this to the prepared casserole dish.

  • Time Hack: Grab a rotisserie chicken from the grocery store to use as your cooked shredded chicken.

Step three: Last just top with the remaining 1 cup of cheese then place in the oven to bake for 15-20 minutes.

Step four: Remove from oven and serve warm.

  • Optional garnish: I topped mine with fresh diced parsley for garnish.

Ingredients 

  • 3 cup cooked and shredded chicken
  • 2 cup instant rice
  • 22.6 oz cream of chicken soup
  • 1 oz ranch seasoning
  • salt and pepper, (to taste)
  • 2 cup cheddar cheese, (shredded)

Instructions 

  • Preheat the oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray then cook rice according to package directions.
