This Lemon Ricotta Cake is a classic Italian dessert. It is light and has a great crumb. Made with lemon and ricotta everyone will enjoy this dessert.

I love making food that is simple and tastes great for my family and friends. This Lemon Ricotta Cake is super moist and full of flavor. Made with just a few ingredients this is a simple cake to make that everyone will love.

I made this Lemon Ricotta Cake for dessert one night that we had friends over for dinner. It went great with the Chicken Alfredo I made for dinner.

Ingredient Notes:

  • Box of Lemon Cake Mix
  • Large Eggs
  • Ricotta Cheese – I used whole milk ricotta for this recipe.
  • Vegetable Oil
  • Milk
  • 1 lemon zested and juiced – one lemon will yield around 2 tablespoons of lemon juice and 1 tablespoon of lemon zest.
  • Powdered Sugar – optional garnish
  • Fresh Lemons – optional garnish
  • Fresh Strawberries – optional garnish

Directions:

Step One – Preheat your oven to 350 degrees F. Prepare a pan. You can use either a 9-inch springform pan with nonstick cooking spray or a 9-inch cake pan lines with parchment paper.

Step Two – Into a large mixing bowl add lemon cake mix, eggs, ricotta cheese, oil, milk, and the zest and juice of 1 lemon.

Step Three – Mix ingredients until smooth and well combined. Then pour into your prepared baking dish.

Step Four – Place cake into the oven to bake for 30-35 minutes or until a toothpick comes out clean.

Step Five – Once cooked through remove from the oven and allow to cool completely in the pan. Once cooked remove it from the pan.

Optional: Add powdered sugar, sliced lemons, and slice strawberries as optional garnish to your cake.

What is a Ricotta Cake?

Ricotta cakes are made with ricotta cheese as a main ingredient. Ricotta cheese is a soft, creamy cheese with a mild flavor, and it lends a unique texture and richness to cakes and desserts.

While the rest of the ingredients in a ricotta cake are typical cake ingredients, the result is a moist and tender cake with a slightly dense and creamy texture. It is not as thick and creamy as a cheesecake, as it does cook denser and thicker.

They are often served with powdered sugar or glazes and may include fruit, nuts, or chocolate chips. Ricotta cheese in cakes creates a delightful combination of sweet and creamy that many people find quite appealing.

How should you store a Ricotta Cake?

So, you can store this Lemon Ricotta Cake on the counter if covered with plastic wrap or in an airtight container. It will last about 2-3 days on the counter.

If you store the cake in the refrigerator, it should last 5-7 days.

  • 3 large eggs
  • 1 cup whole milk ricotta cheese
