Ingredient Notes:
- Chicken Breast – Boneless, skinless chicken breasts are lean and shred or slice easily after cooking. Chicken thighs are another great option if you prefer darker meat.
- Baby Carrots – Makes the meal even heartier and gives it some color.
- Yukon Gold Potatoes – Yukon Gold hold their shape well in the slow cooker and become perfectly tender.
- Butter – A few small pieces of butter melt into the potatoes, adding richness and extra flavor.
- Grated Parmesan Cheese
- Minced Garlic
- Seasoning – Italian seasoning gives this meal plenty of flavor without overpowering the chicken. You can also add in salt and pepper.

Directions:
Step One – Wash and dice potatoes then add them to the bottom of your slow cooker with baby carrots.
Step Two – Place chicken breast on top of veggies.
Recipe Tip
Chicken thighs work great here too if you want a juicier, more forgiving result. Chicken breast is leaner but can dry out more easily, so keep an eye on the cook time if you go that route.

Step Three – Melt butter and mix in parmesan cheese, garlic, and all seasoning then pour this over chicken in the slow cooker.

Step Four – Cook on low 6 hours on high 4 hours or until chicken is cooked through and veggies are tender.

- Cut evenly: Chop the potatoes into evenly sized pieces so they cook at the same rate.
- Go dark, if you like: Chicken thighs stay especially juicy if you prefer dark meat over breast.
- Keep the lid on: Avoid opening it while cooking, since it releases heat and adds to the cooking time.
- Broil for color: Pop the cooked chicken under the broiler for 2–3 minutes for extra golden color.
- Spoon on the juices: Drizzle some of the cooking juices over the chicken and potatoes before serving for extra flavor.

- 3 medium Yukon gold potatoes, (about 1 pound potato)
- 1 pound baby carrots
- 1 ½ pounds chicken breast, (boneless and skinless)
- ½ cup butter, (unsalted)
- ½ cup grated parmesan cheese

- 1 teaspoon italian seasoning
- ½ teaspoon salt

Instructions
