    S'mores Cookies

    These delicious S'mores Cookies are made with chocolate chips, mini marshmallow, and a toasted brown butter. One of my favorite cookie recipes.

    Chocolate and marshmallows make the best combination and these S'mores Cookies are delicious. 

    If you love cookies as much as I do then you want to check out a few of my all time favorites recipes like the classic chocolate chip cookie and for something really simple a cake batter chocolate chip cookie is amazing!

    S'mores Cookies Ingredients:

    For this recipe you are going to need the following ingredients.

    • Butter: I used unsalted and have it at room temperature.
    • Brown sugar
    • Granulated sugar: This is just basic white sugar.
    • Eggs: I used one whole egg and then 1 extra egg yolk.
    • Vanilla extract
    • Semi-sweet chocolate chips: I like using semi-sweet but you can also use milk chocolate or dark chocolate to fit your taste.
    • Flour: I use all-purpose white flour.
    • Baking soda
    • Salt
    • Mini marshmallows

    How to Make S'mores Cookies:

    Step one: Get started by preheating your oven to 375 degrees F. Then line a baking pan with parchment paper and set aside.

    Step two: Next brown the butter over medium heat. Making sure to stir constantly until it turns golden brown.

    Be careful when doing this step and do NOT leave it on the stove, because it can easily get burned. Once it is ready set it aside, let it cool.

    Step three: Next in a large bowl, add the browned butter and both sugars. Then mix until combined.

    Step four: Now you can add the eggs and vanilla. Beat on low until fluffy with a hand mixer or use a whisk.

    Step five: Now you can mix in the dry ingredients slowly, until everything is combined.

    • Very Important Tip: Do not over mix or your cookies will not be soft. Mix them until just combined.

    Step six: Now use a spatula to fold in the chocolate chips.

    Step seven: Cover the bowl with plastic wrap and chill in the refrigerator for 1 hour.

    Step eight: Next you want to use a small cookie scoop to make the balls of dough. Place your thumb in the middle to form a cavity and place 2 mini marshmallows inside. Roll together until marshmallows are completely covered.

    Step nine: Place them on the lined baking pan around 2 inches apart. They will expand, so keep that in mind.

    Step ten: Bake for 8 minutes or until the edges look lightly golden, remove from the oven and gently press 1 or 2 more mini marshmallows into the top of each cookie. Place the cookies back in the oven for another minute or two.

    • Tip: Don't overcook these cookies. If they look uncooked you can still remove them and allow them to cook on the pan outside the oven.

    Tips and FAQ:

    Why are there brown specks in my bowl butter? The brown specks are normal and actually toasted milk solids. Don't get rid of them because they have a lot of flavors.

    Browning butter tips: When browning your butter slice the butter into pieces so they will melt and cook evenly. Also make sure you don't stop staring. This will also help everything to come out evenly.

    Marshmallow Tips: Don't use too many because they could have a blowout. Just use 1 or 2 only per cookie.

    Ingredients
      

    • ¾ cup unsalted butter (room temperature)
    • 1 cup brown sugar (packed)
    • ¼ cup granulated sugar
    • 1 large egg plus 1 yolk (room temperature)
    • 2 tablespoons vanilla extract
    • 1 ¾ cups semi-sweet chocolate chips
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ¾ cup mini marshmallows

    Instructions
