Summertime is so much fun around our house. Pool days, late nights, BBQs and hanging out with friends and family. This Strawberry Banana Cheesecake Salad is the perfect side dish or dessert to bring to any BBQ.

It’s easy to make. Light and fluffy but rich with a cheesecake flavor this fruit salad is amazing!

How to make Strawberry Banana Cheesecake Salad:

Start by using an electric mixer to soften and cream the cream cheese. Once creamed mix in the pudding mix.

Fold in and mix the whipped topping, then chill in the refrigerator for an hour. While the pudding mix is chilling, prepare and prep the strawberries and bananas. Sprinkle some lemon juice on the fruit to help preserve it.

Gently fold in the fruit to the cheesecake mix. Serve right away or chill in the refrigerator until ready to serve.

How long can you keep this Fruit Salad?

Typically, this type of “salad” needs to be eaten pretty quickly. Ideally, you want to only keep this refrigerated for about 3 days. After 3 days, I would recommend discarding it.

Recipe Tip

One way to help extend this salad is to make sure your fruits are dried as best as possible before mixing together. Pat them down with a paper towel before using the lemon juice.

Can I make this Fruit Salad in Advance:

When planning a party or get together I know making food in advance makes the day of so much easier. I would suggest prepping this salad the day before and then tossing it together when you are ready to serve.

Dice your strawberries but not your bananas. They usually tend to go back the fastest so I would wait until the day of for those. Seal and place your strawberries in the fridge.

You can make the cheesecake pudding mix and store in an airtight container as well. When you are ready to serve add bananas to the cheesecake mix then toss.
