Why This Recipe Works

This pie uses straightforward, pantry-friendly ingredients and comes together with very little hands-on time.

The filling bakes up smooth and creamy every time, with just the right balance of pumpkin and spice. It’s a make-ahead-friendly dessert, too, so it’s one less thing to worry about on a busy holiday.

ingredients for the Pumpkin Pie.

Ingredient Notes:

  • Pre-made Refrigerated Pie Crust – Saves time and effort while still giving you a flaky, homemade-tasting crust.
  • Pumpkin Puree – The base of the filling; make sure to use pure pumpkin puree, not pumpkin pie filling, which already contains added sugar and spices.
  • Sweetened Condensed Milk – Adds sweetness and creates the pie’s smooth, creamy texture without needing a separate sugar and cream mixture.
  • Large Eggs – Helps the filling set as it bakes, giving the pie its sliceable, custard-like texture.
  • Pumpkin Pie Spice – Provides the warm, classic flavor of cinnamon, nutmeg, ginger, and clove in one simple step.

Directions:

Step One: Preheat the oven and get a pie dish ready with a light coat of nonstick spray, then fit your pie crust into the dish.

Recipe Tip

You can use a store-bought crust to save time, or go for homemade. Here’s my homemade pie crust recipe if you want to make your own from scratch.

Step Two: Whisk together the remaining ingredients until smooth, then pour the mixture into the crust.

Step Three: Bake until a knife inserted 1 inch from the crust comes out clean and the center is almost set.

A slight jiggle in the very middle is fine, since it will keep cooking as it rests.

Recipe Tip

Cooling matters – Let the pie cool completely (2-3 hours) before slicing, it needs that time to fully set.

How to make a homemade pie crust:

Homemade Crust: If you want to make your pie crust from scratch then check out my simple recipe for homemade pie crust. It’s so easy to make, I promise you can do it.

Most refrigerated pie crusts come two to a box. Use one and save the other for another pie.

Cooking Tip: You can place foil around the edge of the pie halfway through cooking to make sure it does not burn.

How to make this pie ahead of time:

This pie is perfect for making the day before. Cook according to the directions then allow cooling to room temperature.

Cover and place in the fridge for 2-3 days. Eat chilled (I prefer it this way) or reheat at 300 degrees until warm throughout.

Frequently Asked Questions

How to tell when it’s done. Insert a knife about 1 inch from the crust. If it comes out clean, the pie is ready. The center should be almost set, with just a tiny jiggle right in the middle. That’s okay, since it will finish setting as it cools.

Can I make this ahead of time? Yes, this pie is actually best made a day ahead, so it has time to fully chill and set.

Can I freeze pumpkin pie? Yes, though the texture may change slightly once thawed; freeze without toppings for best results.

Why is my pumpkin pie filling cracking? Cracks usually come from overbaking. Pull the pie once the knife comes out clean near the crust, even if the very center still jiggles slightly, and let it cool at room temperature.

Ingredients

  • 1 pre-made refrigerated pie crust
  • 15 oz pumpkin puree, (1 can)
  • 14 oz sweetened condensed milk, (1 can)
  • 2 large eggs
  • 2 teaspoons pumpkin pie spice

Instructions

  • Preheat oven to 450 degrees F. Prepare a pie dish with nonstick spray and pie crust.
  • Whisk together remaining ingredients and pour into crust.
  • Bake for 15 minutes, then reduce heat to 350°F and bake for an additional 30 to 35 minutes, until a knife inserted 1 inch from the crust comes out clean and the center is almost set, with just a slight jiggle in the very middle.
  • Let cool to room temperature, about 2 to 3 hours, before serving.

Notes

Pie crust: You can use a store-bought refrigerated crust or make my homemade pie crust. Most refrigerated crusts come two to a box. Use one and save the other for another pie.
Cooking tip: If the crust edges start to brown too much, cover them with foil or a pie shield when you lower the oven to 350°F.
Make ahead: This pie is perfect for making the day before. Let it cool to room temperature, then cover and refrigerate. Serve chilled (my favorite way) or warm slices in a 300°F oven for about 10 to 15 minutes.
Storage: Store leftovers covered in the refrigerator for up to 3 to 4 days.
Freezing: Wrap the cooled pie tightly and freeze for up to 1 month. Thaw overnight in the refrigerator. Freeze without whipped cream or other toppings for best results.

  1. Decided after not having pumpkin pie for our Canadian Thanksgiving dessert this year that I missed that treat. When I saw this recipe and how simple it was, I couldn’t wait to make a pie.. I am so glad that this recipe arrived yesterday, aside from making my home smell delicious. I’m bringing back all those warm and cosy family feelings this pie hit the mark 100%.. It is truly a creamy delicious pie. As I wanted something simple, I used the pre made pie crust from my freezer, next time I’m going to try your pastry recipe as I’m sure it has to be perfect. Just like your pumpkin pie ( filling) recipe was ! I will be sharing more slices today with my Condo neighbours, but the two I shared with so far have texted me that they want the recipe! A true sign of a fantastic recipe!
