Ingredient Notes:
- Peaches – Fresh peaches are wonderful when they’re in season, but canned (drained) or frozen peaches make this recipe easy to enjoy all year long.
- Sugar
- Salt
Topping:
- Butter – Melted butter creates a rich, golden cobbler topping with crisp edges.
- Sugar
- Vanilla Extract
- All-Purpose Flour – Helps thicken the peach filling so it isn’t too runny after baking.
- Baking Powder

Directions:
Step One – Preheat oven to 350 degrees. Prepare a 2-quart casserole dish with non-stick cooking spray and set aside.
Step Two – Peel and slice peaches then place them in a mixing bowl. Mix your peaches with sugar and salt.

Step Three – Add these peaches to the bottom of your prepared casserole dish.
Step Four – In a separate mixing bowl mix together your melted butter, sugar, vanilla, flour, and baking powder. Mix until combined but don’t over mix. Once just mixed spoon on top of your peaches.

Step Five – Bake for 25-30 minutes. Remove from the oven and allow to cool for 15 minutes before serving.

When shopping for peaches there are a few things to look at to make sure you are picky the right ones. With any fruit, the first indicator of good fruit is the color. Look for a peach that is bright in color without brown or green spots.
You can also feel is a peach is good by gently squeezing it. You want your peach to be soft without being mushy. A firm peach will still need some time to ripen.

How to Peel a Peach:
It can be tricky to peel a peach without losing much of the fruit and only removing the skin. I like to place them in boiling water for just about 10-15 seconds. Remove them from the water and place in ice to stop the cooking process. Once cool enough to handle you can gently use a knife to peel and the skin should come right off. Once peeled you can slice in half in remove the pit then slice for your cobbler.

Storage and Reheating:
Refrigerator
Store leftover peach cobbler covered in the refrigerator for up to 4 days.
Freezer
Freeze the baked cobbler for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheating
Warm individual servings in the microwave or reheat the baking dish in a 325°F oven until heated through.
