Ingredient Notes:
- Yukon Gold Potatoes – Yukon Gold or red potatoes work best because they roast evenly and become wonderfully creamy inside.
- Olive Oil – Helps the potatoes roast beautifully and creates those crispy edges everyone loves.
- Lemon Juice – Fresh lemon juice provides the brightest flavor and helps balance the richness of the potatoes.
- Herbs – I used Rosemary, Oregano and Dill for the herbs.
- Spices – I used Garlic Powder, Salt and Pepper.

Directions:
Step One: Start by preheating your oven to 400 degrees F and then prepare a baking sheet with nonstick cooking spray or foil.
Step Two: Next prepare your potatoes by washing and slicing them. Then place them in a large mixing bowl.

Step Three: Add oil and the juice from 1 lemon to your potatoes and mix to coat potatoes.
Recipe Tip
I perfer to use a fresh lemon for this recipe but you could use a bottle of lemon juice. I use olive oil for this recipe but any oil you prefer will work.
Step Four: Add all seasonings to potatoes and mix to coat potatoes again.

Step Six: When your potatoes are seasoned go ahead and place them onto your prepared baking sheet. Bake for 40-45 minutes or until potatoes are tender and crispy.
Recipe Tip
Flipping potatoes half way though will help your potatoes to be crispy on both sides but it’s not necessary.

Tips for Best Results
- Cut potatoes into similar-sized pieces for even cooking.
- Spread potatoes in a single layer to help them crisp properly.
- Use fresh lemon juice whenever possible.
- Roast at a high temperature for the best texture.
- Stir halfway through cooking to ensure even browning.
How to keep roasted potatoes from getting soggy:
When roasting any vegaetable you want to make sure that you don’t create anything that could cause stem.
For example covering the pan with foil can trap the air and cause steam or placing potatoes on top of each other. Place your potatoes on a large baking sheet and spread them out.
You can also remove them from the oven half way thought and flip them to make sure all sides are crispy.

How to reheat roasted potaotes:
You can reheat two different ways to make sure you keep your potatoes crispy and warm though.
- Oven: Place on a baking sheet and bake at 400 for 10-15 minutes
- Stove top: Place 1 tablespoon of oil in a skillet over medium heat. Add potaotes and cook while moving potatoes around for 5-8 minutes until warm though.

Lemon Herb Roasted Potatoes
Ingredients
- 2 pounds Yukon gold potatoes
- 2 tablespoons oil
- 1 small lemon, (juiced)
- 1/2 teaspoon rosemary, (dried)
- 1/2 teaspoon oregano, (dired)
- 1/4 teaspoon dill, (dried)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
Instructions
