    Lemon Herb Roasted Potatoes

    These Lemon Herb Roasted Potatoes are the BEST roasted potato recipe. They are so simple to make and full of amazing flavor. I toss them in oil and lemon juice then season them. They go into the oven and it's all done in less then 1 hour.

    Roasted Potato Recipe:

    You all know how much I love a good potato recipe. They are easily one of my favorite foods and I love eating them in every form! These simple Lemon Herb Roasted Potatoes are one of my favorite side dishes.

    I love pairing them with greek chicken drumsticks or grilled brown sugar chicken. 

    How to make Lemon Herb Roasted Potatoes:

    Step one: Start by preheating your oven to 400 degrees F and then prepare a baking sheet with nonstick cooking spray or foil.

    Step two: Next prepare your potaotes by washing  and slicing them. Then place them in a large mxing bowl.

    Step three: Add oil and the juice from 1 lemon to your potatoes and mix to coat potaotes.

    • Tip: I perfer to use a fresh lemon for this recipe but you could use a bottle of lemon juice. I use olive oil for this recipe but any oil you perfer will work. 

    Step four: Add all seasonings to potatoes and mix to coat potatoes again.

    Step six: When your potatoes are seasoned go ahead and place them onto your prepared baking sheet. Bake for 40-45 minutes or until potaotes are tender and crispy.

    • Tip: Flipping potatoes half way though will help your potatoes to be crispy on both sides but it's not necessary.

    How to keep roasted potatoes from getting soggy:

    When roasting any vegaetable you want to make sure that you don't create anything that could cause stem. For example covering the pan with foil can trap the air and cause steam or placing potatoes on top of each other. Place your potatoes on a large baking sheet and spread them out.

    You can also remove them from the oven half way thought and flip them to make sure all sides are crispy.

    How to reheat roasted potaotes:

    You can reheat two different ways to make sure you keep your potatoes crispy and warm though.

    • Oven: Place on a baking sheet and bake at 400 for 10-15 minutes
    • Stove top: Place 1 tablespoon of oil in a skillet over medium heat. Add potaotes and cook while moving potatoes around for 5-8 minutes until warm though.

    Ingredients
      

    • 2 pounds Yukon gold potatoes
    • 2 tablespoons oil
    • 1 small lemon (juiced)
    • ½ teaspoon rosemary (dried)
    • ½ teaspoon oregano (dired)
    • ¼ teaspoon dill (dried)
    • ¼ teaspoon salt
    • ⅛ teaspoon pepper
    • ⅛ teaspoon garlic powder

    Instructions
     

    • Preheat oven to 400 degrees F. Prepare a baking sheet with nonstick cooking spray or foil.
    • Wash and slice potatoes. Place them in a large mxing bowl.
    • Add oil and the juice from 1 lemon to your potatoes and mix to coat potaotes.

    • Pour seasoned potatoes onto your prepared baking sheet. Bake for 40-45 minutes or until potaotes are tender and crispy.
