Ingredient Notes:

  • Yukon Gold Potatoes – Yukon Gold or red potatoes work best because they roast evenly and become wonderfully creamy inside.
  • Olive Oil – Helps the potatoes roast beautifully and creates those crispy edges everyone loves.
  • Lemon Juice – Fresh lemon juice provides the brightest flavor and helps balance the richness of the potatoes.
  • Herbs – I used Rosemary, Oregano and Dill for the herbs.
  • Spices – I used Garlic Powder, Salt and Pepper.

How to keep roasted potatoes from getting soggy:

When roasting any vegaetable you want to make sure that you don’t create anything that could cause stem.

For example covering the pan with foil can trap the air and cause steam or placing potatoes on top of each other. Place your potatoes on a large baking sheet and spread them out.

You can also remove them from the oven half way thought and flip them to make sure all sides are crispy.
