    This Cheesy Chicken Casserole is so easy to make and super tasty the whole family will love it! This is a perfect recipe for those nights you do not have much time to make a meal!

    Some days go by so fast I just don't have time to prepare dinner like I would like to. For nights like that I have usually made my All Purpose Slow Cooker Chicken earlier in the week.

    I like to have this cooked chicken on hand so on the days that slip away, I have cooked chicken ready to go for something to make fast.

    How to make this Cheesy Chicken Casserole:

    This casserole is very easy to make. Cook your chicken or use a rotisserie chicken and shred it. Cook noodles to al dente, so they don't get soggy in the casserole. Mix it all together then bake!

    Ingredients:

    • Chicken: That has been cooked and shredded.
    • Penne Pasta: If you don't have penne you can use another pasta you have on hand.
    • Milk: I use skim milk but any milk you have on hand will work.
    • Seasonings: I used seasoning salt, chili powder, onion powder, and garlic powder.
    • Shredded Cheese: I use both cheddar cheese and  Parmesan cheese.
    • Rotel: Rotel is canned tomatoes and green chilis. You can use just diced tomatoes in it's place if you don't want the green chilis.
    • Panko Bread Crumbs
    • Melted Butter

    Directions:

    Step One - Preheat oven to 375 degrees F. Prepare a 9x13 casserole dish with nonstick cooking spray and set aside.

    Step Two - Cook pasta according to package directions. Once cooked drain and set aside.

    • Cooking Tip: Noodles should be Al Dente as you do not want them to get soggy once mixed with the casserole and baked.

    Step Three - In a large mixing bowl mix cream of chicken soup, milk. and all seasonings. Next mix in cheddar, parmesan, cooked chicken, and drained Rotel.

    Step Four - Last add cooked and drained pasta into the mixing bowl. Mix well then add into your prepared casserole dish.

    Step Five - In a small mixing bowl mix bread crumbs with melted butter then sprinkle on to the top of your casserole.

    Step Six - Bake for 25-30 minutes or until casserole is warmed throughout and starting to bubble. Remove from the over and serve.

    Ingredients
      

    • 3 cups penne pasta (before cooking)
    • 10.5 oz cream of chicken soup (1 can)
    • 1 â…“ cups milk
    • ½ teaspoon seasoning salt
    • ¾ teaspoon chili powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon garlic powder
    • 3 cups cheddar cheese (shredded)
    • â…“ cup parmesan cheese (shredded)
    • 10 oz Rotel (1 can drained well)
    • 3 cups chicken (cooked and shredded)
    • 1 cup panko bread crumbs (optional for topping)
    • ½ cup melted butter (optional for topping)
