    Creamy Chicken Fajita Soup

    This Creamy Chicken Fajita Soup is creamy and delicious. Loaded with bell peppers, onion, corn, and full of flavor. It's a recipe you have to try. 

    Creamy Chicken Fajita Soup

    Soup Recipe

    Mexican style food is my all time favorite and putting fajitas in a soup is just the most amazing thing. I honestly may get this cooking for dinner again tonight.

    I love a great soup recipe and this one really is one of my favorites. Filled with shredded chicken, corn, peppers, onions, and fajita seasoning.

    To make it creamy thought we added cream and cheese to the broth for a super yummy soup recipe! Make sure to check out some of my other favorite soups after you try this one like my, Taco Soup!

    Ingredients

    • Chicken: I used boneless and skinless chicken breast.
    • Bell Peppers: I find red, orange, or yellow work best for this soup.
    • Onion: A white onion is what I typically use but feel free to use your favorite onion.
    • Corn: I used can corn but frozen or fresh work for this recipe.
    • Rotel: this is just canned diced tomatoes and green chilis.
    • Salsa: Chucky salsa is what we love to use but use your family's favorite salsa for this recipe.
    • Fajita seasoning: Taco seasoning would also work for this if you already have it on hand.
    • Half and half: This is half milk and half heavy cream. If you can't find this in store just use equal parts milk and cream.
    • Fiesta blend cheese: is our faovire cheese to use for this recipe but you can use any of your favorite shredded cheese.

    Creamy Chicken Fajita Soup

    How to make  Creamy Chicken Fajita Soup:

    Step one: Add chicken breast, bell pepper, onion, corn, Rotel, salsa, chicken, and chicken broth into a large pot then mix in fajita seasoning.

    • Tip: My family prefers this recipe without beans but feel free to add them here if your family enjoys them

     Step two: Allow boiling then reduce heat to medium and shimmer.

    Step three: Remove chicken and shred then add the shredded chicken back into the pot.

    Step four: Pour in half and half and shredded cheese. Mix into soup well and allow to cook for 10 more minutes on low.

    Optional Toppings

    These are some of my favorite things to top with this soup.

    • Crushed tortilla chips
    • Dice cilantro
    • Shredded cheese
    • Diced avocado

    Ingredients
      

    • 1 pound chicken breast (skinless and boneless)
    • 3 cups bell pepper
    • 1 cup onion
    • 15 oz corn (1 can)
    • 10 oz rotel (1 can)
    • 1 cup salsa
    • 32 oz chicken broth
    • 1 oz fajita seasoning
    • ¾ cup half and half
    • 1 cup fiesta blend shredded cheese
    • Optional: Cilantro and tortilla chips for topping!

    Instructions
     

    • Add chicken breast, bell pepper, onion, corn, Rotel, salsa, chicken, and chicken broth into a large pot. Add fajita and mix together. 
    •  Allow to boil then reduce heat to medium and simmer for 30 minutes. Remove chicken and shred then add the shredded chicken back into the pot.
    • Add half and half and shredded cheese. Mix into soup well and allow to cook for 10 more minutes on low.

      Making the recipe right now. You mention adding Heavy Cream and then Half N Half. Does it matter which one I use? Cant wait to try the recipe!!

      I made this for dinner tonight, I used rotisserie chicken and added black beans. It was super yummy topped with sour cream, cilantro and avocado!!

      This is a really easy and tasty recipe. We added a couple jalapenos because we like a little more fire but definitely good! We will make again for sure!
