    This Cheesy Chicken Fajita Soup does not disappoint. It is easy and cheesy it couldn't be more perfect. Filled with flavor in a creamy cheese sauce, you are going to love this recipe. It is a great twist on the Classic Chicken Tortilla Soups out there!

    Cheesy Chicken Fajita Soup

    I love soup and I'm pretty sure I have told ya'll that at least 1,205 time by now but it's true ! It really is one of my favorite foods and this Cheesy Chicken Fajita Soup is on the top of my list. I've made Chicken Fajita Soup before and share it on my blog, it's always been a favorite of mine but this time I took it to a whole new level! A whole new cheesy and delouse level.

    How to make this Cheesy Chicken Fajita Soup:

    For this recipe I started by cutting my chicken into bit sized pieces and cooking them in my pot. For my other chicken fajita recipes I just used shredded chicken which would also work fine for this one but I wanted something different for this soup. Once your chicken is cooked through you can remove it and then cook your peppers and onions until they are nice and tender. Next add in your Rotel and your velveeta cheese. Allow it to cook and mix it until your cheese is melted. Then you can add in your seasoning and broth. So simple and easy and it taste soooo very good.

     Can I make this recipe in the slow cooker:

    To make this in the slow cooker you can either cook the chicken on the stove top or add it right to the slow cooker and shred later. To the slow cooker add your chicken, bell peppers, onions, rotel, seasoning, and broth. Cook on high for 4-5 hours or on low for 6-7 hours. Once chicken is cooked remove from he slow cooker and shred. Return the chicken to the slow cooker with the Velveeta cheese (cubed). Allow to cook for 30-40 more minutes or until the cheese has melted. Stir, serve, and enjoy.

    Ingredients
      

    • 2 tablespoons Butter (divided)
    • 1 pound Chicken
    • 2 large Bell peppers (diced)
    • 1 small Onion (diced)
    • 10 oz Rotel (undrained)
    • 8 oz Velveeta cheese
    • 1 oz Taco seasoning
    • 3 cups Chicken broth

    Instructions
     

    • Warm 1 tbsp. butter in a pot over medium/high heat. Cut chicken into bite size pieces and cook on skillet until chicken is cooked through. Once chicken is cook remove and set aside.
    • Add remaining 1 tbsp. butter to pot. Add diced bell peppers and onion and cook until tender. Add chicken back to the pot.
    • Add Rotel (undrained) and Velveeta cheese to your pot and cook until cheese is melted. Add in taco seasoning and chicken broth. Bring to a boil and then reduce heat and allow to shimmer for 10-15 minutes.
    • Optional: serve with fresh cilantro or tortilla chips

      Why use taco flavor instead of fajita flavor

      Can the cheesy chicken fajita soup be made with a different cheese besides velveeta?

        Hi Lisa. Any easy melt cheese could be used for this recipe. You could also make a Cheese Roux using butter, flour, shredded cheese, and milk.
