If you need an easy dinner that’s warm, filling, and something your whole family will actually eat, this Beef Nacho Soup is one of my go-to recipes. It’s creamy, cheesy, and full of taco flavor, but comes together with simple ingredients and very little effort.

This is the kind of recipe I make on busy nights when I want something comforting but don’t want to spend a lot of time in the kitchen. Everything cooks in one pot, which makes cleanup easy, and it’s one of those meals my kids always get excited about.

Whether you’re looking for an easy weeknight dinner, a cozy soup recipe, or something simple to add to your meal rotation, this Beef Nacho Soup is one you’ll make again and again.

Another favorite food of mine is soup. If you haven’t ever tried it, my Taco Soup, is hands down my favorite soup ever! This is similar to that; except I use ingredients I would put on Nachos.

How to make Beef Nacho Soup:

This Beef Nacho Soup is so simple to make. After you cook your ground beef just dump in the rest of the ingredients and allow it to cook.

Instead of shredded cheese like I would with nachos, I use a cheese dip to give it a cheesy taste, it worked perfectly!

Ingredient Notes:

  • Ground Beef – I use lean ground beef, but any ground meat will work here. Ground turkey or chicken makes a lighter option, and ground sausage adds extra flavor
  • Petite Diced Tomatoes – Regular diced tomatoes work just fine if that’s what you have.
  • Green Chilis – If you prefer more spice, swap for hot green chilis or add a diced jalapeño. If you’re sensitive to heat, you can reduce the amount.
  • Corn – I usually use canned corn (drained), but frozen corn works great too. 
  • Taco Seasoning – This brings the signature nacho flavor. Use a store-bought packet for convenience or homemade taco seasoning.
  • Cheese Dip – This is what gives the soup its creamy, cheesy nacho flavor. Jarred queso works perfectly.
  • Beef Broth – Chicken broth works as a substitute, and you can use low-sodium broth to better control the salt level.
  • Optional – Tortilla Chips and fresh cilantro for topping

Directions:

Step One: In a large soup pot cook and crumble ground beef over medium heat. Once your beef is cooked drain the fat.

Step Two: Next add in petite diced tomatoes, green chilis, and corn then season with taco seasoning.

Step Three: Lastly add cheese dip and mix until melted.

Add broth then bring to a boil. Reduce heat and allow to simmer for 20-30 minutes.

Serving Beef Nacho Soup:

I serve my soup with crushed tortilla chips and freshly diced cilantro.

You can also skip the broth pour it over chips for an awesome nacho recipe.

Can I make this recipe in the slow cooker?

You know I love my slow cooker! So of course you can make this in your slow cooker as well!

Cook your ground beef on a skillet, then add all ingredients to the slow cooker. Cook on low for 4-5 hours or high for 2-3 hours.

FAQs

Can I make Beef Nacho Soup in the slow cooker?
Yes. Brown the beef first, then add everything except the cheeses to the slow cooker. Cook on low for 4–6 hours, then stir in the cheeses at the end.

Can I freeze this soup?
Yes, but keep in mind the texture may change slightly because of the dairy.

How do I reheat leftovers?
Reheat on the stove over low heat or in the microwave, stirring occasionally.

Can I make this less spicy?
Yes, use mild diced tomatoes and reduce or skip any spicy toppings.

  • 1 pound Ground beef
  • 14.5 oz Petite diced tomatoes
  • 7 oz Green chilis
  • 30 oz Corn, (drained)
  • 1 oz Taco seasoning
  • 15 oz Cheese dip, (like cheese whiz)
  • 2 cups Beef broth
  • Optional: Tortilla chips and fresh cilantro for topping
