This Italian Sausage Tortellini Soup is made with a savory tomato base and loaded with cheese tortellini, Italian sausage, and baby spinach. Cooked on the stove top in 30 minutes then it’s time to enjoy.
Soup is my love language y’all. Really make me some soup, and we can be best friends. If you have made any of my soup recipes before; you have heard me say this Italian Sausage Tortellini Soup is one of my favorites. It’s so hard to pick a favorite because I love them all!
This one is seriously amazing, and it’s so full of flavor! I wish I could explain more how yummy this soup is, but you have to try it for yourself! You are going to love it.
How to make Italian Sausage Tortellini Soup:
Start by cooking your sausage in a large pot. Once the sausage is cooked add in the onions and cook them until they are translucent.
Drain any fat and then add in all the remaining ingredients. Cook on low to medium heat for about 30 minutes. Serve and enjoy!
Ingredient Notes:
- Italian Ground Sausage
- Small White Onion – Diced into small pieces for easy eating.
- Crushed Tomatoes – one can is needed for this recipe.
- Diced Tomatoes – one can is needed for this recipe.
- Seasoning – I used thyme, oregano, basil, salt, and pepper.
- Vegetable Broth – I used low sodium broth for this recipe.
- Cheese Tortellini – frozen works best for this recipe.
- Baby Spinach – adds some nice color to the soup.
Directions:
Step One – In a large soup pot cook and crumb ground sausage.
Add in onions and cook until translucent. Once cooked drain fat.
Step Two – Add to your sausage the remaining ingredients and mix together well.
Cover and allow to cook on medium/low for 25-30 minutes or until tortellini is tender and cooked through. Serve and enjoy.
How to make this in the slow cooker:
To make this recipe in the slow cooker you want to start by cooking and crumbling your ground sausage and onions on the stove top. Drain the fat and then add it to your slow cooker.
Put all the remaining ingredients in the slow cooker expect for the spinach. Mix well and then allow to cook on low for 5-6 hours or on high for 3-4 hours. Add the spinach in about 30 minutes before your soup is ready.
How long will this soup last?
This soup has an after cooked shelf life of about 7 days.
Store it in an airtight container in the refrigerator and enjoy for about a week!
Can I freeze this soup?
Yes, you can freeze this soup. It is very easy to do.
Once you have cooked the soup, take it off the heat and allow to fully cool. You do not want to put anything hot in a freezer container or bag and then freeze it.
It is very important it is fully cool, as the steam that will come off in the freeze could cause your container to pop.
Once cooled add to a freezer safe container or bag, and freeze. It should last for about 3 months.

- 1 pound Italian ground sausage
- 1 small white onion, (diced)
- 28 oz crushed tomatoes
- 30 oz diced tomatoes
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1/2 teaspoon basil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cups vegetable broth
- 19 oz cheese tortellini , (frozen)
- 4 cups baby spinach
Instructions
