Why You’ll Love This Recipe
Perfect for Feeding a Crowd
This hearty breakfast casserole makes plenty, making it ideal for holidays, brunches, family gatherings, or weekend breakfasts. Everyone can grab a slice, and it’s filling enough to keep everyone satisfied.
Easy to Make Ahead
You can assemble the casserole the night before, cover it, and refrigerate it until you’re ready to bake. It’s a lifesaver on busy holiday mornings when you’d rather spend time with your family than in the kitchen.
Comforting and Satisfying
With crispy potatoes, fluffy eggs, savory sausage, and gooey melted cheese in every bite, this casserole is classic comfort food that’s always a hit. If you like this one you should also try my Granny’s famous Biscuit and Gravy Casserole.

Ingredient Notes:
- Milk – Helps create a softer, fluffier egg mixture.
- Eggs – Hold everything together and bake into a fluffy, satisfying casserole.
- Ground Sausage – Pork sausage adds classic breakfast flavor, but turkey sausage or spicy sausage work great too.
- Colby Jack Cheese – Shredded, for melty, gooey goodness throughout.
- Frozen Tater Tots – Create a crispy, hearty base and make this recipe incredibly easy. No need to thaw before using.
- Seasoning – I used garlic powder, onion powder, salt, and pepper.

Directions:
Step One – Preheat oven to 375 degrees F and prepare a casserole dish with nonstick cooking spray.
Step Two – Whisk together milk, eggs, and seasoning and set aside.

Step Three – Cook and crumble ground sausage then drain fat and place in the bottom of your prepared casserole dish.

Step Four – Top cooked ground sausage with shredded cheese.
Step Five – Next, add tater tots to the top of the casserole then pour in egg wash evenly.

Step Six – Bake for 40-45 minutes or until cooked through. You know it’s cooked when you can put a toothpick in and it comes out clean.
Optional: top with diced green onions.

Tips for Best Results
- Drain well: Brown and drain the sausage thoroughly to prevent excess grease in the casserole.
- Shred your own cheese: Freshly shredded cheese melts smoother than the pre-shredded kind.
- Let it rest: Allow the casserole to rest a few minutes before cutting for cleaner slices.
- Check for doneness: Insert a knife in the center to make sure the eggs are fully set.
- Watch the top: Cover loosely with foil if it starts browning too quickly.

I am wondering if you have ever tried making this ahead and serving the next morning? What about freezing it? It looks delicious, but I am concerned that the cooking time would take too long on school mornings. Thanks!
I have yet to freeze this one but since the tater tots are already frozen I think it would work well. You can also make the night before, cover it, refrigerate, and then bake in the morning.
