When you’re preparing a big meal for a party, a large family, or even a holiday gathering, letting your sides cook in the slow cooker saves both time and valuable oven space.
When you’re roasting a turkey or baking a ham, the oven can be tied up for hours.

How to make Slow Cooker Cheesy Vegetable Casserole:
This recipe is so simple to make. It’s a favorite of mine because of that! Dump it into the slow cooker, give it a mix, and cook.
Simple and easy is the best way to go for side dish recipes. Here is how to make this recipe:
Step one: The dump part. Just place the vegetables, cheese soup, vegetable broth, and half of your shredded cheese in the slow cooker.

Step two: Time to mix. Mix everything right in the slow cooker.
Once it’s mixed place the lid on and let it cook until the vegetables are tender and all the cheese is melted.

Step three: Last all you need to do is add remaining cheddar cheese on top and cover with lid.
Allow cooking for an additional 30 minutes until cheese is melted and all vegetables are tender.

Slow Cooker Cheesy Vegetable Casserole
Ingredients
- 24 oz California medley vegetables, ( I used two 12 oz bags)
- 10.5 oz cheddar cheese condensed soup
- 1/2 cup vegetable broth
- 1 cup shredded cheddar cheese, (divided)
Instructions
- Place California medley vegetables, cheese soup, vegetable broth, and 1/2 cup of cheese in the slow cooker. Mix well and allow to cook on low for 3-4 hours.
- Add remaining cheddar cheese on top and cover with lid. Allow to cook for an additional 30 minutes until cheese is melted and all vegetables are tender.







This recipe has become every Holidays most requested side. Some say itโs better than green bean casserole. Donโt shoot the messenger lol.
Do the veggies get mushy? 3 hours seems like a long cooking time for vegetables.
Can I make this in the oven ? If so how long to cook it if triple one double

Can you add French Fried Onions to this near the end of the cooking time?
Yes you can do that.
can you use fresh vegetables?
You can but you may have to adjust cooking time. I think raw veggies would take longer.
Can I add pasta to stretch this recipe?
Yeah you can do that!

Iโm doubling the recipe for a family Christmas party. And I have a 3.5 quart Crockpot. Will my Crockpot size be able to handle the double recipe?

No! It filled my 7qt almost full!
