This Rotisserie Chicken Casserole is the perfect way to turn a store-bought rotisserie chicken into a warm, comforting dinner with almost no effort. It’s creamy, cheesy, and packed with flavor, making it an easy weeknight meal the whole family will love. Using pre-cooked chicken means this casserole comes together fast, so you can have dinner on the table without spending hours in the kitchen.

Why This Recipe Works

No cooking the chicken. A store-bought rotisserie chicken does the hard part for you, making this one of the fastest casseroles you can put together.

Creamy, cheesy base. The soup and sour cream make it rich and comforting, the kind of dish your family will ask for again.

Buttery cracker topping. Crushed Ritz and melted butter bake up golden and crisp, adding crunch to every bite.

ingredients for the Rotisserie Chicken Casserole.

Ingredient Notes:

  • Rotisserie Chicken: you can use any cooked and shredded chicken.
  • Cream of Chicken Soup
  • Sour Cream
  • Seasoning: onion powder, garlic powder, salt, and pepper.
  • Ritz Crackers: that have been crushed
  • Butter: unsalted and melted

Directions:

Shred: Pull the meat off a rotisserie chicken, discarding the bones and skin, then shred it into bite-sized pieces.

Recipe Tip

Shred the chicken while it’s still slightly warm, since the meat pulls apart much easier than once cooled. Your hands work faster than two forks for a whole chicken, and let you feel for small bones along the way. Pull the meat along the natural grain of the muscle rather than across it for cleaner shreds.

Preheat: Heat your oven to 350°F and coat a 2-quart casserole dish with nonstick cooking spray.

Combine: Stir the shredded chicken together with the cream of chicken soup, sour cream, and seasonings until everything’s evenly coated, then spread it into the bottom of your prepared dish.

adding all the ingredients into a large glass bowl to mix together.

Layer: Scatter the crushed Ritz crackers over the top and drizzle with the melted butter so every corner gets some.

Bake: Slide the casserole into the oven for 20-30 minutes, until the topping turns golden. Pull it out, let it rest a couple minutes, then serve.

  1. I cook this all the time. I add water chestnuts, early peas, and sometimes cheddar cheese. I have also added cream cheese. So many ways to change this basic recipe. Delicious

  2. I just got done putting this in the oven. Only thing different is I added frozen broccoli and baked it for 30 minutes
