If you’re heading into the week needing simple dinners that still feel like a full meal, this plan is exactly that. These are recipes I love to make when life is busy but I still want something warm and homemade on the table.

This week we have a mix of slow cooker favorites, quick skillet dinners, and a couple cozy casseroles that always get eaten without complaints.
Nothing complicated, just dinners that work for real life and real schedules.

Monday – Slow Cooker Steak and Potatoes
This is one of those set-it-and-forget-it dinners that feels like comfort food at its best. Tender steak, hearty potatoes, and everything cooks together in one pot so dinner is ready when you are.

Tuesday – Taco Casserole
All the taco flavors you love baked into one easy dish. It’s layered, cheesy, and perfect for feeding the whole family with minimal effort.

Wednesday – Egg Roll in a Bowl
A quick skillet dinner that’s packed with so much flavor. It has all the takeout-style goodness but comes together fast and keeps things simple for a midweek meal.

Thursday – Slow Cooker Cilantro Lime Tacos
Another easy slow cooker win. The chicken cooks low and slow and comes out super flavorful, perfect for tacos, bowls, or whatever you have on hand.

Friday – Hamburger Hashbrown Casserole
This one is always a hit with my family! It’s creamy, cheesy, and made with simple ingredients you probably already have, it’s exactly the kind of Friday night dinner that everyone is going to love.

Saturday – Velveeta Mac and Cheese
A cozy, classic side that easily turns into dinner. It’s creamy, simple, and perfect for a slower weekend night when you just want something easy. I love making this on a weekend so we can also serve it with any leftover as our protein.

Sunday – Slow Cooker Chicken Alfredo Tortellini
This is your Sunday comfort meal. Rich, creamy, and made even easier in the slow cooker. It’s perfect for ending the week with something that feels a little extra without extra work.
