This is the kind of meal I make on busy days when I need dinner ready by the time everyone gets home. Just add everything to the slow cooker, let it cook low and slow, and you’ll have a hearty soup that’s filling, comforting, and perfect for feeding a family.

How to make the Slow Cooker Chicken Taco Soup:

As with most of my slow cooker recipes, this one is very easy to make. Put your chicken in the slow cooker first, and then all the other ingredients on top of the chicken. Turn your slow cooker on and let it cook until dinner time! Serve topped with tortilla strips, cheese and sour cream!

Ingredient Notes:

  • Chicken Breast – Chicken breasts shred easily after cooking, making this soup hearty and filling.
  • Canned Corn – Adds a touch of sweetness and great texture.
  • Rotel – adds a little spice to the soup.
  • Black Beans – Black beans add protein, texture, and help make the soup more filling.
  • Taco Seasoning – Provides the classic taco flavor without needing a long list of spices.
  • Ranch Seasoning – Adds extra flavor and is the secret ingredient that really brings everything together.
  • Chicken Broth – adds more flavor than using water.

Directions:

Step One – Add all ingredients to your slow cooker.

Cooking Directions:

Cook on low for 6 hours or high for 4 hours or until your chicken is cooked through and tender.

Step Two – Remove chicken from your slow cooker and shred then add in back into the slow cooker. Mix and serve.

Ingredients 

  • 1 pound chicken breast, (boneless and skinless)
  • 15.25 oz canned corn, (1 can – drained)
  • 10 oz Rotel, (1 can – drained)
  • 15.25 oz black beans, ( 1 can – rinsed and drained)
  • 1 oz taco seasoning
  • 1 oz ranch seasoning
  • 2 1/2 cups chicken broth

Instructions 

  • Add all ingredients to your slow cooker. Cook on low for 6 hours or high for 4 hours or until your chicken is cooked through and tender.
