Ground Beef Stroganoff is a classic comfort food made simple. Instead of sliced steak, this version uses seasoned ground beef simmered in a rich, creamy sauce and served over tender egg noodles.

A classic dinner made kid friendly.
This Ground Beef Stroganoff was a hit in my house! My kids love sour cream so I knew it would win them over. I did make this recipe more kid-friendly and instead of using fresh mushrooms I used a can of cream of mushroom soup.
We served ours with egg noodles but any pasta would be great to serve with it. I also served steamed broccoli with it. If you want some side dish ideas to go with your stroganoff off check out these.
How to make Ground Beef Stroganoff:
Start by cooking your ground beef with the garlic and onion. Once they are cooked you are going to mix it together with the ingredients to make the sauce.
While the sauce is cooking with the beef, cook your egg noodles so they will be ready at the same time. Serve on top of the noodles and enjoy.

Ingredient Notes:
- Oil – you can use whatever you have on hand, I use EVOO.
- Ground Beef – Use lean ground beef and drain excess grease for a smoother sauce.
- Onion – Sauté until soft for a sweeter, richer taste.
- Minced Garlic – Fresh garlic gives the best flavor but I also will use jarred garlic.
- Flour – Helps thicken the sauce.
- Beef Broth – Warm broth blends more smoothly into the sauce.
- Worcestershire Sauce – Adds depth and savory richness.
- Seasoning – I used dried parsley flakes, salt, and pepper.
- Cream of Mushroom Soup
- Sour Cream – Stir in at the end on low heat to prevent curdling.
- Egg Noodles for serving – Salt pasta water well for better flavor.

Directions:
Step One – Heat oil in a skillet. Add in ground beef and cook and crumble.
Add in diced onions then minced garlic and cook until tender and onions are translucent.

Step Two – Add in flour and mix until absorbed and no lumps remain.
Step Three – Add in broth, Worcestershire sauce, dried parsley flakes, and salt and pepper. Bring to a simmer and allow to simmer on low for 4-5 minutes until slightly thickened.

Step Four – Add in cream of mushroom soup and sour cream. Add more seasoning to taste.

Step Five – Cook egg noodles according to package directions and serve with stroganoff on top.

Beef Stroganoff without Mushrooms:
I know beef stroganoff traditionally has mushrooms in it but I wanted to make a recipe that was more kid-friendly.
This recipe does call for cream of mushroom but if you want no mushrooms at all skip the soup and add more sour cream.
You may also want to add more salt and pepper to taste.

Yes. Reheat gently over low heat and add a splash of broth if needed.
Can I freeze it?
It can be frozen, but the texture of the sour cream may change slightly.
Can I add vegetables?
Peas or spinach make great additions.

- Don’t boil after adding sour cream.
- Taste and adjust salt before serving.
- Garnish with fresh parsley for color.
- Serve with garlic bread or a simple side salad.

Ingredients
- 1 tbsp oil
- 1 pound ground beef
- ½ medium onion, (diced)
- 1 tsp minced garlic
- 2 tbsp flour
- 1 1/2 cups beef broth
- 1 tbsp worcestershire sauce
- ½ tsp dried parsley flakes
- 1/2 tsp salt, (or to taste)
- 1/4 tsp pepper, (or to taste)
- 10.5 oz cream of mushroom soup, (1 can)
- 1 cup sour cream
- Egg noodles for serving
Instructions

What can I substitute for the cream of mushroom soup?
I have not testing this recipe without the soup but you could make your own homemade instead.
This was delicious and so easy. I subbed veggie broth for beef, Beyond Burger for ground beef, and Greek yogurt for the sour cream, and it was the best stroganoff ever.

I am a SUCKER for my mom’s beef stroganoff! We use beef tips rather than ground beef but I’ll have to try it with the ground beef. Yum!!
