If you have been around my blog for know then you know how much I love taco, taco anything! I’ve made so many fun different tacos meals and since the kids even love tacos I’m not stopping anytime soon! This recipe for Cheesy Taco Pasta is so simple is embarrassing. I only used 5 ingredients and it took me just under 30 minutes to make it. It doesn’t get much better than that!
This weekend was busy for us. We had family in town which always means running around town doing fun things or sitting around the house talking and playing games. Sunday after church I needed a quick meal that could feed everyone. This Cheesy Taco Pasta was the perfect solution. Plus its summer and I’m 8 months pregnant, standing around a hot kitchen just not something I was interested in doing!
How to make Cheesy Taco Pasta:
For this recipe, I used rotini pasta but any pasta you have will work perfectly fine for this one. Once you cook it according to the package directions you can drain it and set it aside. I used the same pot that I cooked the pasta in to cook and crumble my ground beef, because fewer dishes, need I say more? Once the ground beef was cooked I just drained the fat and then seasoned it with taco seasoning. Store bought or homemade, either one works! If you want a good recipe for Easy Homemade Taco Seasoning then check out mine. I usually make a big batch and keep it in my spice cabinet. Next, add the salsa, I used 1 1/2 cup of mild salsa. The best for last of course, the cheese! I divided my cheese and added 1 1/2 cup to the pot and mixed it in then added the remaining 1/2 cup to the top to melt. You can even top it with sour cream, tomatoes, cilantro, or even sliced avocados.

This easy pasta dish is sure to be a winner on the dinner table!
- 8 oz Rotini
- 1 pound Ground beef
- 1 oz Taco seasoning
- 1 1/2 cups Salsa
- 2 cups Shredded mexican cheese (divided)
- Prepare rotini pasta to package directions. Drain and set aside.
- In a large pot cook and crumble ground beef until fully cooked. Drain fat then return to stove top and season with taco seasoning. Add cooked pasta to pot with cooked and seasoned ground beef along with salsa and mix well.
Add 1 1/2 cup cheese to pot and mix until melted. Remove pot from heat and add remaining cheese to the top and allow to melt. Serve and enjoy!
