My classic Taco Soup recipe has been so popular with my readers and is one of my favorite recipes. I thought I would make another version, but this time loaded with cheese. I mean you can’t go wrong with cheese.

Ingredient Notes:
- Ground Beef – Ground beef makes this taco soup hearty and filling. I like using lean ground beef and draining any excess grease before adding the remaining ingredients.
- Corn – Canned, frozen, or fresh corn will all work in this recipe. Drain canned corn before adding it.
- Salsa – Use your favorite brand or add my Homemade Salsa.
- Rotel – Diced tomatoes with green chilies add extra flavor and a little heat. Use mild Rotel if you’re serving kids or prefer less spice.
- Taco Seasoning – Use your favorite brand or my Homemade Taco Seasoning.
- Cheese Whiz – This is what makes the soup extra creamy and cheesy. Cheez Whiz melts easily into the broth, so you get a smooth cheese flavor throughout the entire soup without needing cream cheese or a homemade cheese sauce.
- Beef Broth – The broth creates the base of the soup and balances the thicker Cheez Whiz.

Directions:
Step One – In a large pot cook ground beef, crumbling and stir occasionally until browned. Drain fat and return to stovetop.

Step Two – Add corn, salsa, Rotel, taco seasoning, dry ranch mix and mix together well. Add cheese whiz and mix until melted and well combined.
Recipe Tip
Keep the heat low once you add the cheese, this helps the soup stay smooth and creamy.

Step Three – Pour in beef broth and allow to simmer on medium/low for 30-40 minutes.
Optional: Serve topped with fresh cilantro.

Cheesy Taco Soup
Ingredients

- 15 oz corn, (canned)
- 2 cups salsa
- 10 oz rotel
- 1 oz taco seasoning
- 15 oz cheese whiz
- 2 cups beef broth
Instructions
- In a large pot cook ground beef, crumbling and stir occasionally until browned. Drain fat and return to stovetop.
- Add corn, salsa, Rotel, ranch and taco seasoning, dry ranch mix and mix together well. Add cheese whiz and mix until melted and well combined.
- Pour in beef broth and allow to simmer on medium/low for 30-40 minutes. Optional: serve topped with fresh cilantro.
