You all know I love making soup. This Chicken Dumpling Soup is a twist on a classic Chicken and Dumpling dinner. Made with render chicken and in a creamy broth, you will hand drop homemade dumplings into the soup, to make it hearty and filling.

How to make Chicken Dumpling Soup:

Start by cooking your onions, carrots and celery in the bottom of a large stock pot. Once they are cooked add in the broth, milk, and seasonings. Cook for 5 minutes, and once thickened add the shredded chicken and peas. Allow the soup to simmer while you prepare the dumplings. Once the dumpling dough is ready use a cookie scoop to drop the dumpling dough directly into the soup. Simmer for about 15 more minutes, and the top with fresh parsley and serve.

Ingredients:

  • Butter – I prefer using butter in this recipe instead of oil for cooking the veggies.
  • Diced Carrots – diced into bite sized pieces.
  • Diced Celery – diced into bite sized pieces.
  • Diced Onion – diced into bite sized pieces.
  • All-Purpose Flour – helps thicken the soup.
  • Salt
  • Pepper
  • Garlic Powder
  • Italian Seasoning
  • Milk – I used 2% milk for this recipe.
  • Chicken Broth – I used low sodium chicken broth for this recipe.
  • Cooked Chicken – Use my All-Purpose Slow Cooker Chicken recipe for this.
  • Frozen Peas – frozen peas added later with the chicken prevent them from getting too mushy.
  • Chopped Fresh Parsley – optional for topping, but it adds a nice flavor.

Directions:

Step One: Over medium heat melt the butter in a Dutch oven and cook carrots, onions, and celery until softened. About 5 minutes.

Step Two: Stir in 2 tablespoons of flour and cook for a couple of minutes.

Then add garlic powder, Italian seasoning, salt, and pepper and stir in chicken broth and milk.

Allow to cook for about five minutes until slightly thickened.

Step Three: Once thickened add the cooked chicken and peas.

Allow the soup to simmer while preparing the dumplings.

How to make the dumplings:

These dumplings are really easy to make and taste great in the soup. These seasoned dumplings are just “dropped” right into the soup, and they cook perfectly.

Ingredients for the Dumplings:

  • All Purpose Flour
  • Garlic Powder
  • Onion Powder
  • Salt
  • Baking Powder
  • Melted Butter
  • Milk

Step Four: Stir together the flour, baking powder, salt, pepper, onion powder, and garlic powder.

Then pour in the milk and melted butter. Stir until just combined.

Recipe Tip

I used shredded all-purpose slow cooker chicken for these dumplings, but you can use any leftover chicken you like, such as rotisserie chicken.

Step Five: Using a small cookie scoop or a spoon, drop dumpling dough into the pot.

Try not to drop dumplings on top of one another.

Step Six: Cover pot and simmer for 12-15 minutes.

Do not open the pot so that the dumplings steam properly.

Recipe Tip

Make sure to use the lowest temperature possible while still maintaining a simmer when cooking your dumplings. This is so your soup doesn’t scorch.

Step Seven: Once done sprinkle with fresh chopped parsley and serve.

How to store this soup:

Refrigerate leftovers in an airtight container for up to 5 days or freeze for up to 3 months.

When reheating you may want to add water, broth, or a little milk to think the soup backout.

Can I freeze this soup?

Yes, you can freeze this soup. It is very easy to do.

Once you have cooked the soup, take it off the heat and allow too fully cool. You do not want to put anything hot in a freezer container or bag and then freeze it.

It is very important it is fully cool, as the steam that will come off in the freeze could cause your container to pop.

Once cooled add to a freezer safe container or bag, and freeze. It should last for about 3 months.
