Chicken Fajitas are a classic Mexican dish that is served with perfectly seasoned chicken strips with sauteed bell peppers and onions. Add in some spices and lime juice this will become a weekly dinner tradition in your house. Serve with your favorite fajita toppings and enjoy!
We have the trend Taco Tuesday, but can we make Fajita Friday a thing? I think we can! We make fajitas often in our house, and it usually is a weekly thing!
Any chance I can use to make a Mexican dish at our hose I take. These Chicken Fajitas are full of flavor and loaded with all your favorite Mexican inspired toppings!
How to make Chicken Fajitas:
Prep and Marinade: Chicken Fajitas is a recipe that can be made quick or one that takes some time. You can season your chicken with a store-bought pack of fajita seasoning and skip the marinade if you are in a rush.
For this recipe I take the long way to make these. There is something about allowing the chicken to marinade overnight in the sauce that makes these fajitas amazing!
Cook: Throw your chicken strips in the skillet and cook them, then cook the peppers and onions.
Serve: Once they are cooked load up your tortillas with the chicken and peppers and then top them with your favorite toppings like cheese, sour cream, salsa, Pico de Gallo and guacamole.
Ingredient Notes:
These fajitas require quite a few ingredients to get on the table. You have the main fajita ingredients, the ingredients for the marinade, and then the optional toppings you want to serve with the fajitas.
Fajitas:
- Chicken Breasts – boneless and skinless.
- Bell Peppers – Sliced. Use any color you want. I used green, red and yellow peppers for these fajitas.
- White Onion – Sliced.
Marinade:
- Chili Powder
- Ground Cumin
- Garlic Powder
- Oregano
- Salt
- Pepper
- Oil – I used vegetable oil for this recipe.
- Lime Juice – Use a fresh lime and squeeze to get the juice you need.
Serving and Toppings: These are all optional and you can use whatever you want for the topping.
- Tortillas
- Tortilla Chips
- Mexican Rice
- Shredded Cheese
- Sour Cream
- Salsa
- Guacamole
Directions:
Step One – Prepare fajita marinade by adding all the ingredients into a small mixing bowl and whisking together.
- Tip: Set aside some of the marinade for the peppers.
Step Two – Cut your chicken breast into ½-1-inch-wide strips.
Place chicken strips into a large mixing bowl and pour in ¾ of the prepared marinade.
Toss chicken in marinade to coat. Place in the fridge to marinate for 20-30 minutes or overnight.
Step Three – Prepare your fajita veggies by slicing them into thin strips and set them aside.
Pour the reaming ¼ of the prepared marinade on your veggies and toss to coat.
Step Four – Heat a large skillet with non-stick cooking spray or oil over medium heat.
Add prepared sliced veggies and sauté until softened yet still crispy. Set aside cooked veggies on a plate for later.
Step Five – Place marinated chicken into the skillet and cook for about 2-3 minutes per side or until chicken strips are cooked through.
Step Six – Add veggies back into the skillet with cooked chicken. Season with salt and pepper to taste. Serve in tortillas with optional serving ingredients.
How to serve fajitas:
Just like your favorite Mexican restaurant, I love to serve my fajitas right out of the skillet. Place a hot pad on the counter or table where you are serving.
Pass around the tortillas and load them up! Corn tortillas or flour work fine. I typically use a smaller size tortilla for fajitas.
Alternate ways to serve would be on top of a bed of Mexican Rice or on top of nachos! Regardless of how you serve them, I know you will enjoy them!
What to serve with your fajitas?
Making these fajitas and enjoying them just as it, is perfectly fine! But one big part of this meal is also the toppings that you add.
There are some many options and things you can add to these fajitas to make them even more enjoyable. Cool things down with some sour cream and cheese.
Heat things up with salsa and jalapenos. Avocado slices or guacamole go great as well.
One thing I always have with my fajitas is slices of lime, so I can squeeze fresh lime juice on to my fajitas.
The citrus and sweetness of the lime juice really enhances the flavors and spices in the chicken and peppers.

Ingredients
Chicken Fajitas:
- 3 medium chicken breast, (boneless and skinless)
- 3 medium bell peppers, (tricolors)
- 1 medium onion
Fajita Marinade:
- 1/2 tablespoon chili powder
- 1/2 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon oregano
- 1/4 teaspoon salt, (or to taste)
- 1/8 teaspoon pepper, (or to taste)
- 2 tablespoons oil
- 1 tablespoon lime juice
For Serving:
- tortillas
- avocado
- shredded cheese
- sour cream
- salsa
- lime wedge

I used precooked chicken fajita meat, found in the cold cut refrigerated unit. I also used the trio peppers -yellow, orange, and red, cut in thin strips. Just delicious!
