Chicken Meatloaf is a healthier twist on the Classic Comfort Food that meatloaf is. Ground Chicken mixed with breadcrumbs, Parmesan, and Worcestershire sauce and topped with a ketchup glaze makes this meatloaf one of the best you will try!

Meatloaf is a classic comfort food that people have been making for years. My husband especially loves a good meatloaf.

This recipe is very similar to my Classic Meatloaf recipe, just made with chicken instead of beef!

This recipe tastes great and does not dry out unlike some meatloaf recipes. You can also try my Turkey Meatloaf if you would like!

How to make Chicken Meatloaf:

Chicken Meatloaf is just as easy to make as a regular meatloaf. Mix all your ingredients together and then form the loaf in your pan.

Bake in the oven, allow it to cool slightly then slice and serve. Make sure you follow my tip below to ensure your meatloaf stays moist and does not dry up!

Ingredient Notes:

  • Ground Chicken – I used a 90/10 ground chicken as I wanted it to be the leanest.
  • Breadcrumbs – I used unseasoned traditional breadcrumbs.
  • Milk – I used skim milk.
  • White Onion – finely minced, you don’t want big pieces of onions in your meatloaf.
  • Grated Parmesan Cheese
  • Eggs
  • Worcestershire Sauce
  • Seasoning – garlic powder, salt, and pepper.
  • Ketchup – divided for the meatloaf and for the glaze. The ingredients below are also for your glaze.
  • Brown Sugar
  • Mustard

Directions:

Step One – Preheat your oven to 350 degrees. Prepare a loaf pan with nonstick cooking spray and set aside.

Step Two – Mix breadcrumbs and milk together and allow milk to soak into breadcrumbs.

This will help keep your meatloaf moist.

Step Three – In a large mixing bowl add the following ingredients:

  •  ground chicken
  • finely minced onion
  • grated Parmesan Cheese
  • eggs
  • milk-soaked breadcrumbs
  • Worcestershire sauce,
  • Seasoning: pepper, seasoning salt, and garlic powder
  • and ½ cup of ketchup.

Gently mix with hands then pat into prepared loaf pan.

Recipe Tip

I like baking mine in a loaf pan, but you can also form into a loaf and place on a baking sheet.

Step Four – Mix remaining ¼ cup of ketchup with brown sugar and mustard.

Add this to the top of your meatloaf.

Step Five – Allow to bake for 1 hour and 15-30 minutes or until your meatloaf if cooked through.

Allow to cool and settle for several minutes then slice and serve.

How to make Chicken Meatloaf not dry:

I have been struggling with making a Chicken Meatloaf and it being too dry. I have found the best way to keep it moist and help it bind together.

Moist Binder: Most meatloaves need a binder to help keep it together. Typically eggs and breadcrumbs are the main things used for the binder in a meatloaf.

Because chicken is usually a dryer meat than beef, a lot of people put mushrooms in their chicken meatloaf to help moisten the loaf up.

Well, what if you do not like mushrooms or have them available? Here is the Meatloaf Game Changing Trick to keep your meatloaf moist.

Our Tip: Soak your breadcrumbs in a little milk! Yes, in Step 2 I say soak the breadcrumbs in the milk.

How long to cook a Meatloaf?

Cooking time can, of course, vary depending on your oven and even your location.

I find my meatloaf takes a good hour and a half to get cooked all the way through.

I suggest after an hour you check your meatloaf temperature.

Once your meatloaf reaches a safe temperature of 160 degrees F it is ready.

Ingredients 

  • 2 pounds ground chicken
  • 1 cup bread crumbs
  • cup milk
  • 1 small white onion, (finely minced)
  • 1/2 cup grated Parmesan Cheese
  • 2 eggs
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic powder
  • ¾ cup ketchup, (divided)
