This Crispy Chicken Salad is just like you would get from your favorite restaurant. Crispy Chicken, hard-boiled eggs, cucumbers and cheese on a bed of spring mix lettuce with Homemade Ranch Dressing makes this a great lunch or dinner salad.

Sometimes I really don’t want to cook dinner. After homeschooling and working throughout the day, cooking a dinner sometimes is just off the table (pun intended).

Salads are a great and fresh way to make a dinner with not a lot of required cooking. All that is needed on this is to cook your breaded chicken tenders and make your hard-boiled eggs.

You can go the easy route and use frozen chicken tenders and store-bought hard-boiled eggs.

How to make a Crispy Chicken Salad with Homemade Ranch Dressing:

Start by preparing your chicken tenders and your hard-boiled eggs. If you want to home, make breaded chicken tenders you can try my Air Fryer Chicken Tender recipe.

Here are my directions for How to Boil an Egg. I used frozen chicken tenders for this recipe and cooked them in my Air Fryer.

Once the eggs and chicken tenders are done slice the eggs in half and the tenders into bite size pieces. Make the rest of your salad and then make your dressing.

Ingredient Notes:

  • Breaded Chicken Tenders – I used frozen chicken tenders to make this recipe easier, but you can make your own with this Air Fryer Chicken Tender recipe if you want!
  • Green Leaf Lettuce – I love Green Leaf lettuce, but you can use your favorite kind of lettuce.
  • Hard-Boiled Eggs – Use this recipe to Hard Boil Eggs.
  • Tomatoes – I use cherry tomatoes for this salad.
  • Cucumbers – sliced for the salad.
  • Colby Jack Cheese – shredded cheese.

Ranch Dressing Ingredients:

  • Mayonesa with lime – you can find this in the Spanish/Mexican section of your grocery store.
  • Buttermilk – you can’t have buttermilk ranch without buttermilk!
  • Ranch Seasoning – I use name brand Hidden Valley Ranch for this recipe.

Directions:

Step One – Prepare your frozen chicken tenders according to the package directions.

Step Two – Make your hard-boiled eggs.

Step Three – Assemble the salad. Start with the lettuce and then add the other ingredients on top with the chicken being the last part.

How to make Homemade Ranch Dressing:

Homemade Ranch Dressing is really easy to make. It goes great with this salad, or to dip any extra chicken tenders into.

Directions:

Step One – Mix the dressing ingredients together in a bowl.

Step Two – Drizzle over the salad, however much you want.

How to store the leftover dressing:

Any leftover dressing you have keep it in an airtight sealed container in the refrigerator.

It should last in the fridge for about 7-10 days.

Crispy Chicken Salad

Ingredients 

Salad:

  • 4 breaded chicken tenders, (depending on size)
  • 2 cups green leaf lettuce
  • 2 large hard boiled eggs
  • 8 cherry tomatoes
  • 1/2 cup sliced cucumber
  • 1/2 cup Colby jack cheese

Dressing:

  • 1 cup Mayonesa with lime
  • 3/4 cup buttermilk
  • 1 oz ranch seasoning, (1 packet)

Instructions 

Crispy Chicken:

  • If using frozen breaded chicken tenders prepare, then according to the package directions.

Assemble Salad:

  • Add lettuce into a salad bowl. Top with hard boiled eggs, tomatoes, cucumbers, and shredded cheese.

Dressing:

  • Mix all ingredients together well. Drizzle over salad as desired. Keep any remaining dressing in an air-tight container in the fridge.
  • Drizzle dressing over salad and serve.

Notes
