 These Easy Beef Enchiladas are so simple to make and taste amazing. Flour tortillas filled with ground beef. It’s all baked in the oven for less than 30 minutes.

I love this simple dinner recipe. You only need 5 simple ingredients for these Easy Beef Enchiladas. 

How to make Easy Beef Enchiladas:

Step one: Get started by preheating your oven to 375°F. Then prepare a baking dish with nonstick cooking spray.

  • Tip: I used a 3-qt casserole dish for this recipe. 

Step two: Next cook and crumble your ground beef until it’s cooked through. Then drain the ground beef then add in 1/2 cup of the enchilada sauce and green chiles to your skillet

Step three: Now pour  1/2 cup of the enchilada sauce to the bottom of your prepared baking dish.

Step four: Prepare your enchilada by placing a spoonful or two of the beef mixture and shredded cheese, making sure to save some cheese for later, down the center of a flour tortilla. Roll the filled tortilla tightly and then place it in your baking dish. Do this with each flour tortilla.

  • Tip: To keep your enchiladas from opening make sure that once rolled you place them in the casserole dish seam down.

Baking Directions:

Step five: Last top your enchiladas with the remaining sauce and shredded cheese. Then place them in the oven to bake for 20-25 minutes.

Easy Beef Enchiladas

Ingredients 

  • 1 lb lean ground beef
  • 10 oz red enchilada sauce
  • 4.5 oz chopped green chiles
  • 8 flour tortillas, (6 inch)
  • 2 cups shredded cheddar cheese

Instructions 

  • Preheat your oven to 375°F. Prepare a baking dish with nonstick cooking spray.
  • Cook and crumble ground beef until cooked through. Drain ground beef then add in 1/2 cup of the enchilada sauce and green chiles to your skillet.
  • Pour another 1/2 cup of enchilada sauce to the bottom of your prepared baking dish.
  • Next prepare your enchilada by place a spoonful or two of the beef mixture and shredded cheese (save some cheese for later) down the center of a flour tortilla. Roll the filled tortilla tightly and then place it in your baking dish. (tip seam down). Do this with each flour tortilla.
  • Top your enchiladas with the remaining sauce and shredded cheese. Place in the oven to bake for 20-25 minutes.

Notes

  • I used a 3-qt casserole dish for this recipe.
