These Beef Enchiladas are so simple to make and taste amazing. Flour tortillas filled with ground beef. It’s all baked in the oven for less than 30 minutes.
I love this simple dinner recipe. You only need 5 simple ingredients for these Easy Beef Enchiladas. These are a great option to make for Taco Tuesday night.
This dinner is made in about 30 minutes. It goes great with my Mexican Rice or my Cilantro Lime Rice.
How to make these Easy Beef Enchiladas:
Start by cooking the ground beef in a skillet. Once cooked add in some of the enchilada sauce and the green chiles to the skillet with the ground beef.
Once the beef is done, spread some of the enchilada sauce on the bottom of the casserole dish.
Prepare your enchiladas by rolling the beef, cheese and some sauce into flour tortillas.
Place them in the bottom of the baking dish, and then top with more sauce and cheese. Bake for 30 minutes and enjoy!
Ingredient Notes:
- Lean Ground Beef – I used a 90/10 for this recipe.
- Red Enchilada Sauce – We love red enchilada sauce, but you can use green if you prefer.
- Chopped Green Chiles – adds a little spice to the dish.
- Flour Tortillas – I use a small to medium tortilla for this recipe, about 6 inches.
- Shredded Cheddar Cheese – shred your own or use a bag.
How to make Easy Beef Enchiladas:
Step one: Get started by preheating your oven to 375°F. Then prepare a baking dish with nonstick cooking spray.

I used a 3-qt casserole dish for this recipe.
Step two: Next cook and crumble your ground beef until it’s cooked through.
Then drain the ground beef then add in 1/2 cup of the enchilada sauce and green chiles to your skillet
Step three: Now pour 1/2 cup of the enchilada sauce to the bottom of your prepared baking dish.
Step four: Prepare your enchilada by placing a spoonful or two of the beef mixture and shredded cheese, making sure to save some cheese for later, down the center of a flour tortilla.
Roll the filled tortilla tightly and then place it in your baking dish. Do this with each flour tortilla.
Recipe Tip
To keep your enchiladas from opening make sure that once rolled you place them in the casserole dish seam down.
Baking Directions:
Step five: Last top your enchiladas with the remaining sauce and shredded cheese. Then place them in the oven to bake for 20-25 minutes.
What is an Enchilada?
An enchilada is a traditional Mexican dish of meat or beans rolled in a tortilla and covered in a savory sauce.
You can top your enchiladas before baking with cheese and additional sauce. Once they are done serve with diced tomatoes, sour cream or guacamole.
Do I have to use Corn Tortillas for Enchiladas?
Traditionally, enchiladas are made with corn tortillas. But if your family is like mine, they (especially the kids) prefer flour tortillas.
Flour tortillas may not be the traditional Mexican way these are made, but they still taste amazing made with them.
What should I serve with enchiladas?
I love serving my Mexican Rice or my Cilantro Lime Rice with any of my Mexican dishes.
You can also serve with a salad, refried beans or avocado slices. Tortilla chips and salsa are a great option as well.

Beef Enchiladas
Ingredients
- 1 lb lean ground beef
- 10 oz red enchilada sauce
- 4.5 oz chopped green chiles
- 8 flour tortillas, (6 inch)
- 2 cups shredded cheddar cheese
Instructions
- Preheat your oven to 375°F. Prepare a baking dish with nonstick cooking spray.
- Cook and crumble ground beef until cooked through. Drain ground beef then add in 1/2 cup of the enchilada sauce and green chiles to your skillet.
- Pour another 1/2 cup of enchilada sauce to the bottom of your prepared baking dish.
- Next prepare your enchilada by place a spoonful or two of the beef mixture and shredded cheese (save some cheese for later) down the center of a flour tortilla. Roll the filled tortilla tightly and then place it in your baking dish. (tip seam down). Do this with each flour tortilla.
- Top your enchiladas with the remaining sauce and shredded cheese. Place in the oven to bake for 20-25 minutes.
