These Grinch Pancakes are a copycat of the famous IHOP pancakes of the same name. I guarantee you, your kids will love these colorful pancakes topped with an icing, instead of syrup!

IHOP has been selling these Grinch Pancakes during the holiday season for a while now! They are so fun and festive, I just had to make them at home for the kids.

Pancakes are a regular breakfast meal at our house. They are always easy to make, and everyone loves them! I normally have my Pancake Mix on hand, which you definitely can use for this recipe!

Whether you use my mix or follow the directions below, have fun making these! Turn on the Grinch movie as well, for the kids while you get this ready!

    How to make Grinch Pancakes:

This recipe is just as easy to make as any Homemade Pancake Recipe is. Make your pancake batter, and then add the green food coloring to it.

Mix the coloring in well, so the entire batter is Grinch green! Heat a skillet and use butter, oil, or cooking spray to cook the pancakes. Flip them once they start to get "bubbly" on the top.

Cook them all and enjoy topped with a homemade cream cheese icing!

Use whipped cream and a full strawberry to make the Grinch's Santa hat.

    Ingredients:

    • All-Purpose Flour
    • Baking Powder
    • Baking Soda
    • Sugar - white table sugar
    • Eggs
    • Milk - whatever milk you have on hand will work. I used 2%
    • Butter - that has been melted. I use unsalted butter
    • Green Food Coloring
    • Non-stick Cooking Spray, Butter, or Oil for the pan

    ingredients for the Grinch Pancakes.

    Directions:

Step One - Shift together flour, baking powder, baking soda, and sugar.

In a separate bowl beat egg then add milk and melted butter.

mixing together the batter for the pancakes.

Step Two - Now mix together wet and dry ingredients. Then add a few drops of green food dye. Start small and add more to get desired color.

adding the green food coloring to the batter and mixing it in.

Step Three - Heat a frying pan with a small amount of butter or non-stick cooking spray. When your pan is heated pour a small amount of batter, about ¼ cup.

    • Tip: I typically use a medium heat. Too hot will burn your butter or spray causing the pancakes to have a more burned look to them.

Step Four - When you see bubbles forming on your pancake it's ready to be flipped! Cook each side until fully cooked. Repeat with all dough until pancakes are cooked.

How to make the cream cheese icing:

This is a very basic cream cheese icing to make for the topping of these pancakes.

    Ingredients:

    • Cream Cheese - that has been softened to room temperature
    • Powdered Sugar - also called confectioners sugar
    • Vanilla Extract
    • Heavy Cream
    • Whipped Cream
    • Strawberries - with the top greens sliced off
    • Red Sprinkles - optional for topping

    Directions for icing:

Step One - For your topping beat cream cheese, powdered sugar, vanilla extract, and heavy cream with an electric mixer until creamy and smooth. Add more cream as needed for desired consistency.

making the icing for the topping on the pancakes.

Step Two - Top pancakes with cream cheese icing. Slice the tops off of your strawberries and place them on top of your pancake.

Add whipped cream around the bottom and top to give the look of a Santa hat. Add red sprinkles as desired.
