    This Rotel Dip is made with only three ingredients and will be the talk of any party you host!

    This Rotel Dip is a favorite at any party I host. It is the one dip I will make that never makes it through a party.

    I have never had someone eat this and not love it! You know I love my dips so be sure to check out my Buffalo Chicken Dip or my 7 Layer Dip. 

    How to make Rotel Dip:

    This is a very easy dip to make. As per my usual routine, I made this in my slow cooker. Cook and drain your beef, then add all the ingredients to your slow cooker.

    Cook for about 2 hours and your are ready to enjoy!

    Ingredients:

    • Ground Beef
    • Velveeta Cheese (cubed)
    • Rotel (undrained)
    • Optional for serving: tortilla chips, carrots, celery, corn chips

    Directions:

    Step One - Cook and crumble ground beef in a skillet over medium heat. Drain fat as needed then add ground beef to your slow cooker.

    Step Two - Add cubed Velveeta cheese and undrained Rotel to your slow cooker and mix.

    • Tip - Cook on high for about 2 hours. Then turn on the lowest setting to keep warm during your party.

    Step Three - Cover and cook on high for 1 ½ - 2 hours. Cook until cheese is melted and creamy. Once cooked mix well and serve.

    Can you cook this dip on the stovetop?

    Yes, this recipe can definitely be cooked on the stovetop and here are the directions for that!

    Stovetop Directions:

    Step One - Cook and crumble ground beef in a large skillet over medium heat. Drain fat as needed.

    Step Two - To your skillet add in cubed Velveeta cheese and undrained Rotel. Cook over medium heat while stirring until cheese is melted and creamy.

    Step Three - Once cheese is melted and creamy remove from heat and serve.

    However you decide to make this recipe, I can almost guarantee that everyone will love it.

    What to serve with Rotel Dip?

    1. Tortilla Chips
    2. Corn Chips
    3. Carrots (baby or sliced)
    4. Celery

    What can I add or substitute in this recipe?

    1. Ground Sausage - Use ground sausage instead of beef if you would like. Kick up your dip by using a spicy ground sausage.
    2. Cheddar Cheese - Add some Cheddar Cheese in replace of half the Velveeta for a strong flavor.
    3. Cream Cheese - Add a block of cream cheese to the dip for extra creaminess.

    • 1 pound ground beef
    • 16 oz Velveeta cheese (cubed)
    • 10 oz Rotel (undrained)
