Amazing potato soup loaded with all your favorites and made right in your slow cooker. This Slow Cooker Loaded Baked Potato Soup is a simple and delicious recipe you are going to love.
Potatoes are one of my favorite foods and I love them just about any way. Potato soup is, of course, a favorite of mine and actually one of the very first recipes I’ve made.
Back in the day my sisters and I were obsessed with American girls. We had an American girl cookbook with a potato soup recipe that we loved to make.
All three of us would team up in the kitchen to make it for lunch for ourselves and it was always so delicious.
How to make Slow Cooker Loaded Baked Potato Soup:
Step one: Start by preparing your potatoes. Peel and dice them and then add them all to the slow cooker with onions and chicken broth. Cook on high for 3-4 hours or low for 5-6 hours until your potatoes are tender.
Step two: Once potatoes are cooked use a masher to mash potatoes. Season with salt and pepper then mix in sour cream and heavy cream Add 1 cup of cooked bacon and 1 cup of cheese to the soup before serving.
Step three: Add 1 cup of cooked bacon and 1 cup of cheese and mix to combine.
Step four: Serve topped with remaining bacon, cheese, and diced green onions.
The best way to cook bacon:
Preheat oven to 400° F. Prepare a baking sheet with aluminum foil and set aside. Lay bacon out on prepared baking dish in a single layer.
Bake until crispy. Lay on paper towels to remove extra grease then crumble for this recipe.

- 4 large russet potatoes
