Slow Cooker Loaded Baked Potato Soup
Potatoes are one of my favorite foods and I love them just about any way. Potato soup is of course a favorite of mine and actually one of my very first recipes I’ve made. Back in the day my sisters and I where obsessed with american girl. The dolls, the books, the computer games, we even where in a club with american girl tea parties and plays we did. We had an american girl cookbook with a potato soup recipe that we loved to make. All three of us would team up in the kitchen to make it for lunch for ourselves and it was always so delicious. How to make Slow Cooker Loaded Baked Potato Soup:
For this recipe you start with just potatoes, onions, and broth in the slow cooker. When the potatoes are just about cooked you can make a butter and flour roux to thicken sauce. You want to slowly add in the sour cream and heavy cream and continue to whisk. If you end up dumping it all in at once the sauce doesn’t combine as well and you end up with thick clumps. Once everything is ready I used a hand mixer to thin out the soup and get rid of the lumpy potatoes but that’s totally optional and up to you, I like a creamer soup. Last I added some cheese and bacon to the soup and then topped it with even more.
The best way to cook bacon:
Preheat oven to 400° F. Prepare a baking sheet with aluminum foil and set aside. Lay bacon out on prepared baking dish in a single layer. Bake until crispy. This slow cooker potato soup is loaded with bacon and cheddar cheese.
- 4 large Russet potatoes
- 1 cup Onion (chopped)
- 3 1/2 cups Chicken broth
- 4 tablespoons Butter
- 1/4 cup Flour
- 1/4 cup Sour cream
- 1 1/2 cups Heavy whipping cream
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 1/2 cup Bacon (cooked and crumbled)
- 1 1/2 cup Cheddar cheese (shredded
- 1/2 cup Green onions (diced)
- Peel and dice potatoes and then add them to the slow cooker with onions and chicken broth. Cook on high for 3-4 hours or low for 5-6 hours until your potatoes are tender.
30 minutes before your potatoes are done prepare your roux (thickening sauce). In a sauce pan melt butter and then add flour. Whisk on medium/low until golden brown. Add sour cream and continue to whisk together. Very slowly add in your heavy cream whisking continually until well combined and a thick sauce is formed. Add this to your slow cooker. Season with salt and pepper and then allow to cook in the slow cooker for the remaining 20-30 minutes.
- Use a masher or hand mixer to thin out soup. Add 1 cup of cooked bacon and 1 cup of cheese to the soup before serving.
- Serve topped with remaining bacon, cheese, and green onions.
