Ingredient Notes:

  • Oil – I used extra virgin olive oil.
  • Pork Loin – Use either a pork loin and or a pork tenderloin. Pork loin is larger and thicker and works well for slow cooking and slicing.
  • Pork Gravy Mix – a bit easier to use a mix than making your own gravy.
  • Italian Seasoning
  • Salt
  • Pepper
  • Garlic Powder

Directions:

Step One – In a small bowl mix together the oil and spices.

Step Two – Place the tenderloin into the slow cooker then pour spice mixture over the meat. Rub the spice mixture over the tenderloin until coated.

Recipe Tip

I used the tenderloin in the two per pack. Depending on the size of your loin you may need to cut it to fit.

Step Three – Cook on low 4 hours or high for 2-3 hours until done. Pork is done when the center reaches 145 degrees. 

Step Four – Once done remove the tenderloin from the slow cooker to rest. Meanwhile whisk the gravy mixture into the juices in the bottom of the slow cooker and cook for 10 more minutes until thickened.  

Recipe Tip

I used the pork gravy but you could use any type of gravy you like.

You will only need to reserve about 1 cup of liquid in the slow cooker for the gravy mix. If you have more liquid than that, remove some before whisking in the gravy mix.

Step Five – Slice the tenderloin and return to the slow cooker to serve.

What to serve with the Pork Loin:

  • Don’t confuse pork loin with pork tenderloin. They are different cuts and require different cooking times.
  • Use a meat thermometer rather than relying only on cooking time. Pork loin can become dry when overcooked.
  • Remove the pork when it reaches 145°F and allow it to rest before slicing.
  • Cooking on Low is best for more even cooking.
  • Don’t completely submerge the pork in liquid. You only need enough broth to create moisture and a flavorful sauce.
  • Let the pork rest before slicing so the juices have time to redistribute.

Does pork loin need to be covered in liquid in the slow cooker?

No. You don’t need to cover pork loin completely with liquid. A small amount of broth in the bottom of the slow cooker provides moisture and creates flavorful cooking juices without boiling the pork.

How do I keep pork loin from drying out in the slow cooker?

The most important thing is to avoid overcooking it. Pork loin is relatively lean, so check it with a meat thermometer and remove it once the thickest part reaches 145°F.

Is pork loin the same as pork tenderloin?

  • 1 Teaspoon Italian Seasoning
  • 1 Teaspoon Salt
  • ½ Teaspoon Pepper

Storage and Reheating
Refrigerator
Store leftover pork loin in an airtight container in the refrigerator for up to 4 days. Keep some of the cooking liquid or gravy with the pork to help it stay moist.
Freezer
Slice the cooled pork and freeze it with some of the cooking liquid in a freezer-safe container for up to 3 months.
Reheating
Pork loin can dry out when reheated, so warm it gently. Place slices in a covered baking dish with a little gravy or cooking liquid and heat until warmed through. Individual portions can also be reheated in the microwave.
