A simple side dish recipe is always needed in your back pocket. These Roasted Green Beans and Potatoes are so simple to make.

I just toss them in a bowl to season them then add them to a baking sheet and pop in the oven while I get dinner started.

This a very quick side dish to make, so it will be great for if you are making something hearty like chicken or beef. Honestly, nothing beats roasted potatoes and green beans in the oven.

How to Make Roasted Green Beans and Potatoes:

As I just said, this is a very simple recipe that is so easy to make. The hardest part is dicing the potatoes and possibly having to cut long green beans. Cut them up and coat in the oil and seasoning. Bake and serve with your favorite dinner entree.

Ingredient Notes:

  • Red PotatoesOther potatoes like Yukon gold would also work.
  • Fresh Green Beans
  • Oil: any oil you have on hand will work. I usually use olive or vegetable.
  • Seasoning:  I used seasoning salt and pepper. You can also use regular salt if you don’t have seasoning salt.

Directions:

Step One – Preheat oven to 400 degrees. Prepare a baking sheet with nonstick cooking spray and set aside.

Step Two – Wash and dice the potatoes. Only cut the green beans if you want to.

This next part is optional, but it will help your potatoes be nice and crispy.

Soak the potatoes in cold water for about 10 minutes to get the excess starch out of the potatoes before baking. Drawing out the starch will really help in keeping the potatoes crispy.

Step Three – Add your potatoes and green beans into a large mixing bowl. Pour in oil and seasonings and toss to mix. Pour onto the prepared baking dish.

  • Tip: Mix your green beans and potatoes gently so they do not get mushy.

Step Four – Bake for 25-30 minutes or until potatoes are tender. Serve and enjoy.

Should I pre-soak my potatoes before roasting them?

Soaking potatoes in cold water before roasting helps remove some of the starchiness from the potatoes. This will also help them crisp nicely.

When cooking potatoes with green beans I would recommend a quick soak, just to help the potatoes cook a little easier with green beans.

Remember to drain excess water off the potatoes before mixing with green beans and the oil.

Variations of Oven Roasted Green Beans and Potatoes:

  1. Change the seasoning – Use Italian Seasoning or try Everything But the Bagel seasoning. These are great changes to this recipe.
  2. Use any potatoes you have – If you don’t have red potatoes, Russet or Yellow potatoes work as well. prepare them the same way.
  3. Add fresh parmesan cheese – Once the vegetables are roasted, sprinkle parmesan cheese on top of the potatoes and green beans.

What to serve this side with:

  • 1 pound Red potatoes
  • 1 pound Fresh green beans
  • 2-3 tablespoon Vegetable oil
  • 1 tablespoon Seasoning salt, (or to taste)
  • 1/2 teaspoon Pepper, (or to taste)
