    Roasted Green Beans and Potatoes

    Tossed in seasoning then roasted in the oven. This Roasted Green Beans and Potatoes recipes is a side dish that is simple to make and one that your family is going to love.

    A simple side dish recipe is always needed in your back pocket. These Roasted Green Beans and Potatoes are so simple to make.

    I just toss them in a bowl to season them then add them to a baking sheet and pop in the oven while I get dinner started.

    This a very quick side dish to make, so it will be great for if you are making something hearty like chicken or beef.

    Making Roasted Green Beans and Potatoes:

    As I just said, this is a very simple recipe that is so easy to make. The hardest part is dicing the potatoes and possibly having to cut long green beans. Cut them up and coat in the oil and seasoning. Bake and serve with your favorite dinner entree.

    Ingredients:

    • Red Potatoes
    • Fresh Green Beans
    • Vegetable Oil
    • Seasoning Salt
    • Pepper

    Directions:

    Step One - Preheat oven to 400 degrees. Prepare a baking sheet with nonstick cooking spray and set aside.

    Step Two - Wash and dice the potatoes. Only cut the green beans if you want to. Soak the potatoes in cold water for about 10 minutes (optional)

    Step Three - Add your potatoes and green beans into a large mixing bowl. Pour in oil and seasonings and toss to mix. Pour onto the prepared baking dish.

    • Tip: Mix your green beans and potatoes gently so they do not get mushy.

    Step Four - Bake for 25-30 minutes or until potatoes are tender. Serve and enjoy.

    Should I pre-soak my potatoes before roasting them?

    Soaking potatoes in cold water before roasting helps remove some of the starchiness from the potatoes. This will also help them crisp nicely.

    When cooking potatoes with green beans I would recommend a quick soak, just to help the potatoes cook a little easier with green beans.

    Remember to drain excess water off the potatoes before mixing with green beans and the oil.

    What to serve this side with:

    You can make this a complete meal by tossing on some diced chicken sausage or kielbasa on the pan or you can serve it with some of my favorites.

    • 1 pound Red potatoes
    • 1 pound Fresh green beans
    • ¼ cup Vegetable oil
    • 1 tablespoon Seasoning salt (or to taste)
    • ½ teaspoon Pepper (or to taste)

      Made this tonight! It was delicious. I used olive oil instead and squeezed some lemon juice on top.
