    My all-time favorite soup recipe that you are going to LOVE! Taco Soup is filled with all your taco favorites. This one is a must-try. This soup is loaded with ground beef, beans, and taco seasoning, and it is super easy to make!

    Anything taco is going to be my favorite! I love the bold taste in Mexican-style food, and could eat it every single day, and never get tired of it! This taco soup is perfect for family taco night and one my entire family enjoys.

    How to make Taco Soup:

    Taco Soup is one of my favorite recipes. I make this for lunch for myself on the stovetop at least twice a week. You can also make it in the slow cooker! Cook your ground beef, and then add your remaining ingredients. Bring to a boil and then simmer. When serving for dinner I love to serve them with these Mini Cornbread Muffins.

    Taco Soup Ingredients:

    • Ground beef: I like to use lean ground beef. You can also use ground turkey.
    • Corn: Use canned or frozen.
    • Salsa: Whatever salsa you prefer will work. I use mild store-bought salsa.
    • Green chilies
    • Taco seasoning: You can use a store-bought mix or make it homemade.
    • Black Beans: Drained and rinsed. Make sure you don't skip rinsing them since that could make the soup overly salty.
    • Ranch seasoning
    • Beef broth

    How to make Taco Soup:

    Step one: In a large pot cook ground beef, crumbling, and stir occasionally until browned. Drain fat as needed and return to stovetop.

    Step two: Next add in your corn, salsa, chilies, black beans, taco seasoning, dry ranch mix and mix together well.

    Step three: Pour in beef broth and allow to simmer on medium/low for 30-40 minutes.

    Step four: Serve and top with optional toppings.

    Topping Ideas:

    We love serving our taco soup with anything we would put in tacos. Here are a few ideas.

    • Shredded cheese
    • Sour cream
    • Tortilla strips
    • Salsa
    • Cilantro
    • Jalapeños

    How to make Taco Soup in the Slow Cooker:

    Yes, you can easily make this in the slow cooker. Just cook your ground beef and add all the rest of the ingredients to the slow cooker. Super simple to make! I have a full recipe on how to do this here, Slow Cooker Taco Soup.

    Can I freeze this soup?

    Yes, taco soup is really simple to freeze. Once it's done allow it to cool completely then add it to a large freezer bag or into individual bags or freezer safe containers for a single serving.

    Keep in the freezer for 3-4 months. Allow thawing in the fridge then reheat in the stovetop or microwave.

    How long is taco soup good for?

    Taco soup doesn't last long in our house, because I can eat it for all 3 meals of every day. This soup will last 5 to 7 days in your refrigerator. Store in an airtight container with a sealed lid.

    Ingredients
      

    • 1 pound Ground beef
    • 15 oz Corn
    • 2 cups Salsa
    • 2 can Green chilies (4 oz each)
    • 15 oz Black beans (rinsed and drained)
    • 2 tablespoons Taco seasoning
    • 1 ½ tablespoons Dry Ranch mix
    • 2 cups Beef broth
    • Optional for topping: sour cream, shredded cheese, tortilla chips, cilantro.

    Instructions
     

    • In a large pot cook ground beef, crumbling, and stir occasionally until browned. Drain fat and return to stovetop.
    • Add corn, salsa, chilies, black beans, taco seasoning, dry ranch mix and mix together well.
    • Pour in beef broth and allow to simmer on medium/low for 30-40 minutes.

      We’ve made this three - four times now! The first time we made it for friends it was a huge hit and they asked me to send them the recipe. The day after since all leftovers were gone I made my own version of it veggie style because we has no meat haha! It’s so easy and so flavorful! The only thing I add is one jar of kidney beans as well to beef it up! So delicious!

      I tried this recipe and my husband (who loves mexican food but is very picky) loved it (he even ate the leftovers)! I'm making it again tonight but adding diced onions. We also use venison instead of hamburger and the salsa is from my garden that I've canned (and hid from my husband). I'm thinking of canning some so there is always some on hand.

        That is a tough one! I would think that 5 times would fit but it depends on your roaster. I have a pretty large one and I am trying to image in. I hope everyone loved this recipe Shannon! Let me know how it turns out!

      This is probably the easiest recipe I've made. After it was done cooking, my husband started screaming. I thought something was wrong and he was screaming of joy.       what if i use rotel instead of salsa and green chili’s? how much do you think i’d need to use (10 oz cans)? i prefer less of a tomato-y taste

        Yes I have used rotel in this before and love it. I usually use two can of it instead of salsa but if you want less tomatoes use one it just will not be as thick. Hope that helps =)

      What if you don't have any beef broth will it work without or can you sub with chicken broot

        Yes! This can be made easily in the slow cooker. You just want to cook and crumble your beef first, drain the fat, then add to your slow cooker. Dump in all the other ingredients and cook it on low for 5-6 hours or on hight 3-4 hours and it should be good to go. Hope you enjoy it Tiffany!

      I used ground turkey, subbed enchilada sauce for salsa, and then added diced onion. This was SO good! Hubby said it's one of his favorite things I've ever made!

      Jennie - I've been making this recipe at home now for a few months, at least once every few weeks! We love it so much. I'm thinking about bringing it to work next week. How do you think it would do in a crock pot? Since it cooks so quickly on the stove, would it do alright for a few hours on low?

        I am actually working on testing it in the slow cooker! I think 3-4 hours on low is good but if you go any longer you can just turn it to low for about 2 hours and then turn it to warm the remaining time. I am also finding that newer slow cookers are cooking a lot faster and higher so that will play into it also when cooking. Hope that helps Rachel!

      My Taco Soup has less ingredients, buy yours sounds divine! I will try your recipe next time.
      My recipe is "4 Can TACO SOUP": 1 lb cooked ground beef, 1 can whole kernel corn or MexiCorn, 1 can black beans, 1 can beef broth, 1 jar salsa. Heat and serve. You can sprinkle shredded cheese on top of bowls.

      I also love anything taco and I love soup? It's a good thing too because I was recently diagnosed with ALS and swallowing is difficult so soups are a good thing. I have seen your recipe and am going to try it right away. I do have one question regarding the recipe. Do you drain the corn & black beans before adding??

      I agree, we loved this Taco Soup! I used Chipotle flavored salsa in the soup and topped it with cheddar cheese and a dollop og homemade pico. It was amazing!
