Today I am sharing with you another mashed potato recipe that you are going to love! Last year my best mashed potatoes recipe went viral and ever since I have been giving you all more of what you want. Creamy and delicious potatoes but this time with a new flavor that I think you will all enjoy just as much. Growing up we did mashed potatoes a lot as a side dish and my sisters and I always had so much creating new flavors with them. Sour cream and chive have always been a favorite of mine. Well, that and the time I made buffalo ranch potatoes with tons of hot sauce. I put hot sauce on pretty much everything growing up.

The Best Sour Cream and Chive Mashed Potatoes

This recipe is pretty simple to make. You want to start by washing, peeling, and dicing potatoes. Place them in a large pot and cover with water. Bring to a boil then reduce heat and allow them to cook until tender. Once tender drain water out and then return to stove top on low heat. Time to add in the good stuff,  sour cream and butter and use a potato masher to mash potatoes. Add fresh minced chives, salt, and pepper and continue to mash. If you prefer a thinner mashed potato this is where you can add milk and continue to mash until you have the consistency you want. Once that is reached just serve and enjoy.

Can The Best Sour Cream and Chive Mashed Potatoes be made ahead of time?

I think potatoes are one of the easiest things to make ahead of time. Cook your potatoes according to the recipe then allow to cool. Once cooled store in an airtight container and place in the fridge overnight. The next day you have two options. 1. Add potatoes to a pot with 1-2 tbsp butter or 1-2 tbsp and allow to cook until heated through. 2. Place the potatoes in a casserole dish. Dice 1-2 tbsp of butter into thin squares and place on top of the potatoes. Bake at 300 degrees until warm.

When reheating a large number of potatoes like this I always like to add just a little more butter or milk to help them get back to their creamy state.

Ingredients 

  • 5 pounds russet potatoes
  • 1 cup sour cream
  • 1/4 cup unsalted butter, (cubed)
  • 1/4 cup fresh chive, (minced)
  • 2 teaspoons salt, (or to taste)
  • 1/2 teaspoon pepper, (or to taste)
  • Optional: if you prefer a thinner potato add milk until you have the desired consistency.

Instructions
