The Menu:

I try to build our weekly menu around balance. A few casseroles for easy oven nights, a couple slow cooker meals that can cook while we go about our day, and always dinners that my family loves.

Monday – Beefaroni

We’re starting the week with a cozy classic. This homemade beefaroni is simple, hearty, and perfect for a Monday night when everyone is hungry and tired. It’s budget-friendly, filling, and always a hit around here.

Tuesday – Stuffed Meatloaf

This one feels a little special but is still easy enough for a weeknight. Juicy meatloaf stuffed with melty cheese in the center makes it extra comforting. Serve it with mashed potatoes or green beans and dinner is done.

Wednesday – Taco Casserole

Midweek calls for something easy, and this taco casserole never disappoints. All the taco flavors layered into one simple bake. It’s quick to assemble and makes great leftovers for lunch the next day.

Thursday – Santa Fe Chicken Foil Packets

These are perfect for a busy evening. Everything cooks together in one packet, making cleanup simple. They’re flavorful, colorful, and one of those dinners that feels fresh but still filling.

Friday – Pizza Casserole

Friday night comfort food. All the pizza flavors baked into a cheesy casserole that the kids love. It’s fun, easy, and a great way to kick off the weekend.

Saturday – Slow Cooker Beef Tips

This is my low-effort Saturday dinner. I can get it started earlier in the day and let it cook until tender and rich. Serve it over rice or mashed potatoes for a hearty family meal.

Sunday – Chicken Tacos

Ending the week with something simple and customizable. Chicken tacos are easy, crowd-pleasing, and perfect for using up anything left in the fridge. Set everything out and let everyone build their own.
