Slow Cooker Beef Tips are tender, flavorful, and simmered all day in a rich, savory gravy. An easy comfort food dinner perfect over mashed potatoes, rice, or noodles.

Slow Cooker Beef Tips are one of the easiest and most comforting dinners you can make. Tender chunks of beef simmer low and slow in a rich, savory gravy that tastes like it took hours of hands-on cooking, but your slow cooker does all the work.
Serve these beef tips over mashed potatoes, rice, or egg noodles to soak up every drop of that delicious gravy. It’s cozy, hearty, and perfect for busy weekdays or a simple Sunday dinner.
How to make Slow Cooker Beef Tips:
Like most slow cooker recipes, you just need to add your ingredients to the slow cooker and then cook.
The slow cooker will do all the work for you. Add your onions and beef tips first. Season the beef, then add the broth and Worcestershire sauce.
30 minutes before it is done, add the cornstarch to thicken it up. Serve over mashed potatoes or rice and enjoy!

Ingredient Notes:
- Beef Stew Meat – Beef stew meat is a cut of beef that’s been trimmed and cut into bite-size chunks, usually from tougher cuts like chuck or round.
- Onion – I used a diced yellow onion.
- Salt & Pepper
- Zesty Italian Dressing Mix – a dry seasoning blend often used to make Italian-style salad dressing, but it’s also a favorite shortcut for adding flavor to savory recipes. It’s made with dried herbs and spices like garlic, onion, oregano, basil, parsley, sugar, and salt, plus a tangy element that gives it its signature zesty flavor.
- Beef Broth
- Worcestershire Sauce – this adds a deep and rich flavor.
- Cornstarch – used as a thickening agent. You could also use flour, arrowroot, or tapioca starch
- Water

Directions:
Step One: Start by adding your onion and beef to your slow cooker.
Step Two: Then season your beef and onions with salt and pepper and zesty Italian seasoning mix.
Next, add beef broth and Worcestershire sauce to your slow cooker.

Step Three: Cook on low for 6-7 hours or until beef is cooked through and tender.
Recipe Tip
To make sure the beef is tender and not chewy we suggest cooking on low for the 7 hours. If you are running low on time you can cook this recipe on high for 4-5 hours instead but you do run the risk of getting a less tender meat in the end.

Step Four: Mix cold water and cornstarch then add to the slow cooker.
Allow cooking for 30 more minutes.
Serve over rice or mashed potatoes.

Frequently Asked Questions
What cut of beef works best?
Stew meat, sirloin tips, or chuck roast cut into chunks all work great.
Can I add mushrooms or onions?
Yes! Fresh mushrooms or sliced onions make the gravy even richer.
Can I make this ahead?
Definitely. It reheats wonderfully and is great for meal prep.
How can I make the gravy thicker?
Add a cornstarch slurry or let the sauce simmer uncovered for a few minutes to reduce.

Pro Tips
- Browning the beef before adding it to the slow cooker adds deeper flavor, but it’s optional.
- For extra richness, stir in a tablespoon of butter at the end.
- Add a splash of red wine to the gravy mixture for a more robust flavor.
- Use low-sodium broth if you prefer a less salty dish.

Thank you so much. I’m making beef tips this morning . Easy recipe.
Thanks for the review Shirley!
I’m skeptical about the Italian dressing mix as I’m afraid my finicky husband would not like it with that in. Would it still be as good without it?
Yes I think it would be good without! Or you could just add the seasoning you like. Maybe a steak seasoning he enjoys?
This sounds delicious. But I typically use flour and water to make a gravy. . Can I use this or should I use the corn starch and water. I have a shaker that I use to mix the flour and water
Yea that would be fine! Make the gravy how you would like!
