    These Santa Fe Chicken Foil Packets are the perfect dinner recipe. They are so simple to make and simple to clean up. My entire family loves this recipe. You can bake them in the oven or toss them on the grill.

    Easy Dinner and Easy Clean up:

    I love a good homecooked meal but I hate doing all the dishes after. These Santa Fe Chicken Foil Packets are so simple to make and the clean up is a breeze. This is a recipe that my mom made for us growing up. Just toss everything in the foil and when you are done toss the foil and mess into the trash. Foil dinner recipes are some of my favorite.

    How to make Santa Fe Chicken Foil Packets:

    Foil Packet meals have become a regular thing in our house. I love throwing all my ingredients into one thing, than cooking it. whether it's a one pot dish or a foil dish, it is easy cleanup and less dishes! Throw your ingredients into the foil pack and roll!

    Ingredients:

    • Chicken Breasts (boneless and skinless
    • Cumin
    • Onion Powder
    • Garlic Powder
    • Rotel (drained well)
    • Corn (drained well)
    • Black Beans (drained and rinsed well)
    • Colby Jack Cheese (shredded)

    Directions:

    Step one: Start by preheating your oven to 375 degrees. 

    Step two: Next prepare your chicken. I seasoned my chicken with cumin, onion, powder, and garlic powder.

    • Tip: If you don't have these seasonings you could also use a taco seasoning.

    Step three: Once your chicken breast is seasoned you can place each chicken it separate pieces of foil. You want to roll up the sides so when you add the rest of the ingredients everything doesn't spill out.

    Step four: Place each foil back in a casserole dish together. I used a 9x13 casserole dish and was able to place all 4 chicken in one dish with room to spare.

    Step five: Now add the remaining ingredients. Evenly add Rotel, corn, and black beans into each foil packet. Top each foil pack with shredded cheese.

    • Tip: I bring the foil together at the top but do not seal completely. 

    Baking Instructions:

    Bake for 30-35 minutes until chicken is cooked through. You chicken is done when the internal temperature is at least 165 degrees.

    Grilling Instructions:

    Preheat your grill on medium/high heat. Prepare foil packets according to instructions then place foil packers directly on your grill. Allow to cook for 20-25 minutes or until chicken is cooked through and at a safe temperature.

    How to make a foil pack?

    When assembling you want to make sure that your food is sealed inside the foil. Lay out a piece of foil and place the food down the middle. Fold each side over so they touch and can seal. Then fold your end towards the middle to seal.

    Serving Options:

    I love making this recipe for dinner. We serve it with chips and salsa or over rice. Here are a few of my favorite recipes that pair perfectly.

    Ingredients
      

    • 4 large chicken breast (boneless and skinless)
    • 1 teaspoon cumin
    • ½ teaspoon onion powder
    • ¼ teaspoon garlic powder
    • 10 oz Rotel (drained well)
    • 15 oz corn (drained well)
    • 15 oz black beans (drained and rinsed well)
    • 1 cup Colby jack cheese (shredded)

    Instructions
     

    • Preheat oven to 375 degrees.
