I love soup recipes! They make the perfect fall and winter food, and I could eat them all year long.

This simple Ground Turkey Taco Soup is a favorite of mine.

Its’s a little more mild then my other taco soup recipes so it’s perfect for the kids.

How to make Taco Soup:

Taco Soup is very easy to make! The hardest part is cooking your meat.

Weather using Ground Turkey or Beef (here is a beef taco soup recipe, 30 Minute Taco Soup), cook it fully and drain.

The basically just dump all the rest of your ingredients into the pot, and cook!

Super easy and SUPER tasty!!!! You and your family will love this soup!

Ingredient Notes:

  • Ground Turkey: This is a great option with lower fat. You can make this soup the same way with ground beef or ground chicken.
  • Corn: I used canned corn for this recipe.
  • Diced Tomatoes: I used canned petite.
  • Beans: I used Kidney Beans and Black Beans. You can use any bean you enjoy.
  • Salsa: I used a chunky store bought jar of salsa.
  • Taco Seasoning: Buy a packet at the store or make your own. Here is my recipe for Homemade Taco Seasoning)
  • Vegetable Broth: You can use any broth that you have on hand.

Directions:

Step One: In a large pot start by cooking and crumbling ground turkey. Drain fat then return it to the stove top.

Step Two: Drain and rinse corn and beans. Place your beans and remaining ingredients into your pot.

Bring to a boil and then reduce the heat to low and allow to simmer for 30 minutes.

Step Three: Serve topped with your favorite taco toppings.

How to Store Taco Soup

Store leftover taco soup in an airtight container in the refrigerator for up to 4 days.

Reheat on the stovetop or microwave until warmed through.

This soup freezes well for up to 3 months.

Ingredients 

  • 1 pound ground Turkey
  • 15 oz corn
  • 15 oz petite diced tomatoes
  • 16 oz kidney beans
  • 16 oz black beans
  • 8 oz salsa
  • 1 oz taco seasoning
  • 14 oz vegetable broth

Instructions 

  • In a large pot start by cooking and crumbling ground turkey. Drain fat then return it to the stove top.
  • Drain and rinse corn and bean. Place your beans and remaining ingredients to your pot. Bring to a boil and then reduce the heat to low and allow to simmer for 30 minutes.
  • Serve topped with your favorite taco toppings. 
    Optional toppings: sour cream, shredded cheese, tortilla chips, and cilantro.

  1. Weโ€™ve been making this for several years now and we always love it! Itโ€™s always a win when a high protein meal like this is toddler approved.

  2. We made this last week and it was a big hit! Everyone loved it. It reminded us of a very hearty chili. Will be adding this to our rotating soup recipes for sure!

  3. I make this soup for my family several times a month, it is super easy, flavorful and healthy!
    I use Old El Paso taco packet and mild salsa, but if you like spicy, that is where you can change up the flavor, also adding some hot sauce.

  4. I made this recipe except I used real chicken breasts shredded instead of ground turkey. My husband said it was the best soup I ever made!!

  5. This was great! However. We like to season our ground turkey a little more while cooking. This is what we did:
    Diced onions and sautรฉed until just browned at edges in olive oil. Added in ground turkey, onion powder, garlic powder, and red pepper flakes (all to taste – we sprinkle generously the first two until the turkey is covered, and a couple shakes of the red pepper) and cooked to brown. Drained the turkey, returned to pot and added all other ingredients, but added at least another cup of broth to cover all the solid ingredients, then followed the rest of the directions from there. We also used a homemade smoked turkey broth instead of vegetable.. seemed to give it just a little more oomph. We absolutely loved it!
