This 30 Minute Taco Soup is one of my favorite soup recipes! My Taco Soup has been a hit with my readers with wonderful reviews.

I decided to make a simple version that can be done in 30 minutes or less. I know some night just get busy and an easy dinner is a must.

How to make 30 Minute Taco Soup:

Start by cooking your ground beef. Once it is done, drain any grease from it. Add the ground beef and all other ingredients to a large soup pot.

Bring to a boil and then simmer from about 20 minutes. Once it is done, serve it topped with sour cream, cheddar cheese and some tortilla chips.

Ingredient Notes:

  • Ground Beef – I used 90/10 ground beef for this recipe.
  • Canned Corn – I did not drain the canned corn for this recipe.
  • Salsa – Use your favorite brand of salsa for this recipe.
  • Rotel – Use the full can, including the juice.
  • Canned Black Beans – Drained and rinsed.
  • Taco Seasoning – Use a store-bought pack of taco seasoning or make Homemade Taco Seasoning.
  • Beef Broth – I used low sodium broth for this recipe.

Directions:

Step One: Start by cooking your ground beef.

Use a large pot to cook and crumble ground beef and once cooked drain fat as needed.

Step Two: Next add all the remaining ingredients and mix well.

Bring to a boil and then reduce heat and allow to simmer for 20 minutes

Step Three: Now it’s time to serve!

Spoon into a bowl and serve with your favorite taco toppings.

Should I drain the cans?

For this recipe I only drained and rinsed the black beans. I added the entire cans of corn and Rotel.

If you want to drain them all then add in an addition 1/2 cup of broth.

What to top your taco soup with:

If you need some ideas on what to serve on your taco soup here are some of our favorites. You can top it with any of your favorite taco toppings. I would steer clear of shredded lettuce though!

Ingredients 

  • 1 pound ground beef
  • 15.25 oz canned corn
  • 16 oz salsa
  • 10 oz rotel
  • 15 oz canned black beans, drained and rinsed
  • 1 oz taco seasoning
  • 2 cups beef broth

Instructions 

  • In a large pot cook and crumble ground beef. Once cooked drain fat. 
  • Add all the remaining ingredients and mix well. Bring to a boil and then reduce heat and allow to shimmer for 20 minutes. 
  • Serve with your favorite taco toppings. 

Notes

    1. Very good! I didn’t have Rotel on hand but I had a can of diced tomatoes and a can of diced green chiles. Came out great! Everyone loved it! Thanks!
