I love trying new flavors of classic recipes and this BBQ Chicken Quesadilla is one of my favorite ways to make quesadillas for lunch. Filled with your favorite BBQ sauce, chicken, onion, and my favorite, cilantro!

Quesadillas are a quick lunch we have often here. This BBQ Chicken Quesadilla recipe is easy to make and super tasty. The kids will definitely love them!

How to make BBQ Chicken Quesadillas:

Start by mixing your chicken, BBQ sauce, onion and cilantro together in a bowl. Make sure the chicken is covered nicely.

Prepare your frying pan and place a soft tortilla on the pan. Fill with you chicken mixture and then top with cheese.

Fry on both sides until the outer side of the tortillas is a nice golden brown color.

Flip and cook both sides allowing the cheese to melt. Serve with Pico de Gallo, Salsa, or Sour Cream!

Ingredient Notes:

  • Rotisserie chicken (any cooked chicken works, try my All Purpose Slow Cooker Chicken)
  • BBQ Sauce (use your favorite brand)
  • Red Onion (diced)
  • Cilantro (died)
  • Flour Tortillas
  • Shredded Cheese

Directions:

Step one: In a small bowl add chicken, BBQ sauce, red onion, and cilantro.

Step two: Mix all the ingredients together in your mixing bowl.

Then prepare a skillet with nonstick cooking spray and warm it on medium/low heat.

Step three: Place tortilla on skillet and add a spoon full of chicken mix and add some shredded cheese.

Step four: Fold tortilla over and allow to cook until cheese has started to melt.

Flip and cook on the other side until crispy.

Step five: Add cooking spray again and repeat steps until all 4 tortillas are cooked.

Step six: Use a pizza slicer to cut into triangles. Optional: Serve with ranch dressing for dipping.

Tips:

  • You can switch out the chicken for any shredded meat or even use beans in place of meat.
  • I know cilantro isn’t for everyone so if you aren’t a fan just skip it.

What to serve with BBQ Chicken Quesadillas:

Now I know this isn’t a full on Mexican inspired quesadilla, but you can still serve your favorite taco or burrito toppings with this.

I love eating these with Pico de Gallo or Homemade Salsa. My kids love to dip these in sour cream or Ranch dressing.

Whatever you choose, they will taste great with this recipe!

BBQ Chicken Quesadilla

An amazing lunch full of flavor this BBQ Chicken Quesadilla can be made right on your stovetop!

Ingredients 

  • 2 cups Rotisserie chicken, (any cooked chicken works)
  • 1 cup BBQ sauce
  • 1/2 cup Red onion, (diced)
  • 1/2 cup Cilantro, (diced)
  • 4 Flour tortillas
  • 2 cups Shredded cheese

Instructions 

  • In a small bowl add chicken, BBQ sauce, red onion, and cilantro. Mix together until chicken is completely coated.
  • Warm skillet on medium/low heat and add cooking spray. Place tortilla on skillet and add a spoon full of chicken mix and added 1/2 cup of shredded cheese. Fold tortilla over and allow to cook until cheese has started to melt. Flip and cook on the other side until crispy.
  • Add cooking spray again and repeat steps until all 4 tortillas are cooked.
  • Use a pizza slicer to cut into triangles. Optional: Serve with ranch dressing for dipping.

  1. I’ve been making these for 7 years. I love them! I don’t use rotisserie chicken- regular thigh meat.
