BBQ Chicken Quesadilla
I love quesadillas! It's usually my go-to lunch when Chad is home. They are easy and quick to make and I usually have all the ingredients in my pantry all the time! I changed it up and went with some BBQ chicken quesadillas. Of course, the hubby loved them! We love BBQ Chicken in this house and I've shared several recipes using it. If you love it as much we do then check out my other BBQ chicken recipe next!

So if you are struggling with simple lunch ideas you will want to keep this one in your back pocket. I used a rotisserie chicken to make this recipe super easy. I pulled the chicken apart and placed it in a bowl. I covered it in our favorite BBQ sauce, added diced onions, and fresh diced cilantro. When I was ready to cook it I just spooned on the chicken mix into the tortilla and topped with cheese. This is seriously so good Y'all, it's a must try! I served mine with more fresh cilantro on top and ranch for dipping.
How to make BBQ Chicken Quesadilla:
